  • This baked rigatoni pasta (pasta al forno) with beef and pork meat sauce is the ultimate comfort food dish! In this 2nd episode of the meat sauce series, rigatoni is combined with mozzarella, Pecorino Romano cheese, and the hearty meat ragu that we made in the previous episode.     BAKED PASTA WITH MEAT SAUCE
    INGREDIENTS:
    -1 pound ground beef
    -1 pound ground pork
    -(3) 28 ounce can plum tomatoes
    -1 6 ounce can tomato paste
    -1 medium onion
    -2 cloves garlic
    -1/2 cup dry white wine
    -1/4 cup olive oil
    -1 pound rigatoni
    -1 pound mozzarella
    -3/4 cup pecorino

    Love this recipe! I’ve also done this with a meat sauce that has Italian sausage (in place of the beef and pork), and it turned out great! Thank you for all the great recipes! I’ve always loved Italian-American food and everything I know how to cook is from cookbooks and various recipes I’ve found on the Internet over the years. Being from Texas and not having anyone that could actually teach me, I’ve had to make assumptions here and there with how I do some things. Your channel has helped clarify a lot of the dishes I have been doing for 10-15 years and I’ve added several dishes to my repertoire as well, so I can’t thank you enough!

    My kids (and their friends) love my baked pasta. I use ziti but everything else is pretty similar, could probably make it once a week and they'd all be very happy. I try to limit my carb intake...pretty difficult to do, but when I do indulge in this dish I do like a few chili flakes. Great channel!

    I made this recipe, yesterday, I thought I had ziti, but did not. The closest I had was large elbow macaroni. Kind of lame, but I made it anyway, and it was absolutely delicious. I don’t know if it rivals my mother-in-law‘s famous baked ziti, which I think is based on a version my husband and his family had in Montauk, when he was a kid. But it was thoroughly enjoyed. I used basket ricotta. Especially good! Here in NoCal it’s not easy to get Italian/American, a.k.a. New York-style Italian food. As a Querns native, I really miss it. Was happy to come across your channel the other day!

    Easy to make and god did it turn out good! Next go around I’m tripling the garlic and more seasoning with the meat sauce. But the combination of the cheeses really made the difference in anything I’ve made that were similar. Thanks as always for the “How To” and the recipe.

    Another great recipe; I only found your channel a few months ago and have been trying to watch them all. I love baked pasta dishes! I really like Rigatoni instead of Ziti for these type dishes. (I have seen Ziti Rigati once in a while which seems to make more sense than a smooth pasta). Anyway, my wife wants that huge wooden spoon! Where did you get it? (I'm just glad my Mom didn't have one of those growing up!) Love your videos and love the Long Island/ Tri-State references as someone who lived in Suffolk County most of my life (originally from Brooklyn and now in North Carolina).

      Hey thanks very much! I carved all my spoons that you see in these videos. Since you know Suffolk county, this spoon comes from the Home Depot in Farmingdale after a pear tree fell down during Hurricane Sandy. I was really into carving during that period of time. I even contemplated starting a woodworking channel years ago. Anyway if you like this spoon I suggest checking Etsy or googling "hand carved spoons" or " hand carved Ladles".

    Making. I’m just using hot sausage crumbled in crushed tomatoes and bow ties.
    Miss my Polly O. San Antonio doesn’t have good Italian stuff.
    Whole Foods ( however ) makes a good Italian sausage.
    I used to order it on line.
    My husband is from Brooklyn and I’m from Jersey. Fish out of water!

      Thank you! Years ago I became addicted to wood carving. All of my spoons are hand carved by me. I even thought of starting a UA-cam channel for spoon carving.

    Salt is really not nessary while cooking pasta. I never use salt and it works just fine, just stire it the first minute and your fine.
