    Ingredients for making Meringues:
    4 Eggs
    1/8 Teaspoon of lemon juice
    8.8 oz of caster sugar
    Vanilla extract
    Salt
    parchment paper
    Instructions for making Meringues:
    - First, separate the whites from the yolks with your eggs and pour the egg whites into a large mixing bowl.
    - Add your lemon juice to the bowl, and whip the mixture with a stand mixer and mix until the cream holds it's peaks.
    - Then while mixing, add your caster sugar gradually, one tablespoon at a time.
    - Once all the sugar is added, turn up the speed on the mixer. Once mixed, check to make sure all the grains are gone.
    - Now add your a dash of vanilla extract and a pinch of salt and whip the ingredients until the cream forms stiff peaks.
    - Now on a baking pan, use a little bit of cream to glue down your parchment paper, and line the bottom of the pan with it.
    - Now form and place small balls of your Meringue in the baking pan.
    - You can now place the baking pan in the over at 300°F for 25 minuets. Once that's done, turn off the oven and leave the Meringue in the oven for an hour. The Meringues are ready when they no longer stick to the bottom of the pan.

    I recommend only separating one white at a time into a cup. Once it is separated, pour it into the mixing bowl. Then repeat for each egg. Separating all the egg whites into one cup risks contaminating all the previously separated eggs with yolk should one of the yolks break. If done one at a time, only one will be lost in this scenario.

    Hi...Can I keep the meringue mixer at the counter top, until the first batch is baked??(my oven takes 1hr 15min to bake)

    Hello. Does it melt after its remove and cool down in oven when you expose it to room tenp for 10 min? Becasue i want to try this because my french meringue melts after 10 min while im packing them 1 by 1 to sell it.😢. Hope you can give me a tip. And the meringue dont last for 3 days even sealed in plastic bag. I also tried puting tylose on it but still melts while im repacking. Dont jnow if how many days it will last. My last option is royal icing, thats what im going to sell it i cant succeed with meringue 😢 thanks. Hoep you can help me. 😊

    what kind of oven setting are you supposed to use? I can't find ANYTHING about it on the internet
    do you preheat oven?
    do you run fan on or off?
    do you heat up top or bottom or both?
    which rack do you put them on?
    etc

      Depends on your oven. First, do not make meringues on a humid day. Second, yes: preheat oven to 200°f, or 225°f. One pan: middle rack. Two pans, top, and second rack from bottom. If two or more pans are in the oven, rotate occasionally when you test for doneness.
      When rubbing the raw mixture, you're seeking a smooth finger rub, with no trace of granulation. At this point, do not overbeat. All through beating the mixture, wipe down bowl with a spatula often to incorporate all of the mixture and ensure complete smoothness. Clean and dry the spatula between uses, or you will end up with some gritty meringues. Edible, but undesirable.
      If you pipe meringues, they're smaller, and take less time. Place close together. If at stiff peaks, they barely spread.
      Large size, or small, place the meringues on the middle rack, set timer for one hour, and after that hour, touch one meringue to see if it crumbles and is sticky. If so, close door, and bake undisturbed for 1/2 hour longer. Then take one meringue, and check the bottom to ensure that there is zero browning. Break it to see if it is soft inside, and remove if that's how you like them. Or, replace in oven for 10 minutes, turn oven OFF, and leave meringues to dry out for at least 1/2 hour more. They should be white , ideally, or, less ideally, very, very light tan on bottom.
      A) Ensure that all containers and beaters are grease-free. (Wipe lightly with vinegar or lemon juice using paper towel before start). B) 1/8 teaspoon of cream of tartar works as well as or better than lemon juice in meringues. C) Oven fan is optional. I've baked with, and without. The results were identical.
      Leave meringues to cool before sampling. If they are liquidy inside, sugar syrup is HOT. You might scald your tongue. It stings.
      One last thing. Fine vanilla powder is preferable to liquid vanilla. Powder sometimes leaves little speckles. The flavour is more pronounced, and there is no alcohol to dilute the mixture. I get jars at a health food store, big: and packaged in plastic bags at a co-op, smaller. These I transfer to dark glass: empty yeast jars are perfect. Keeps in a cool, dark, dry cupboard for at least a year. Vanilla powder is useful in almost all baking. Costly. Worth it.

    How do you get perfect white? Mine gets burnt even if I tune to the lowest temperature.

      3 years late but I assume you placed them in the fridge, which moisture will be attracted to it even if you use an air tight container
