27:25 OK, this isn't exactly a spoiler to tell you who they are, since the family situation is a little complicated, but I'll put it low enough that you have to 'read more' to see it just in case you want to keep trying to guess.
From Left to right, Summer Rose (Ruby's mom), Taiyang Xiao Long (Ruby and Yang's dad), Raven Branwen (Yang's mom), and Qrow Branwen (Raven's brother, and Yang's blood uncle, and the one who trained Ruby. Is considered Ruby's uncle as well by both of them.) They were on a team together, called Team STRQ (Stark)

Ruby and Yang's dad looks different in this episode due to the fact that his 3D Model wasn't ready. There is another character at the end of the volume that is in a similar situation.

man, Nora losing her colour and turning grey, is one of the best foreshadows they ever did
If it's even foreshadowing, which I'm not convinced it is, because it could easily just indicate her mood and doesn't have the same effect as the grey later... I mean she should be becoming more calm as she gets more grey if it is foreshadowing... And yet her feelings seem to increase with the greyness, not decrease... So if it was meant to foreshadow that later reveal, then I don't find it that good as foreshadowing... So in my opinion it's either not foreshadowing or it's not as good as the better foreshadowing they have done... I can't think of anything else that it could be foreshadowing, so if you meant something else then I still have a similar issue.... I'm not convinced it's foreshadowing and in that case I think other foreshadowing was better.
But hey, that's just my take.
Yay! So happy you are on this volume now! This is such a great volume opening episode. From the sweet start with Ruby talking to her mom, to seeing the awesome arena for the first time, the fights, the comedy at lunch, all of it! It’s just all awesome.
FYI: for the first episode of every volume, the OP is shown at the end.
This is the last season they used Poser, their original animation software. RT switched to the Maya engine with V4.
You will love V3 as there is at least one fight in most of the chapters.
For Weiss' glyphs, the white ones are always shown as solid platforms, while the black ones mess with physics in one of two ways: either changing momentum, or changing gravity. If you go back to the fight with the Nevermore (big bird) in Volume 1, you can see Weiss using both types to help Ruby take it out.

Weiss & Blake between them have the highest dexterity, and their "checkmate" combos are impressive.

Id love to see the soundtrack reactions, but im more hyped to see you watch more of the show.
Personally, I think going forward, you should get your feet wet with the first episode of a series and then watch the soundtrack of the last season. It's what you did for season 1, and now 2, and it honestly has a good flow to it like that.

Elephant in the room; this is the first episode since Monty Oum's passing. They added the grave scene at the beginning as a tribute to him. The shot of birds flying into the sun is a reference to how Monty used to write his name; the birds are even in the same position as his signature. In a similar vein, his brother Neath Oum will take over as Ren's voice actor. Neath is an absolute sweetheart who puts in a lot of dedication and passion into his performance as Ren moving forward. From here on, the credits at the end of each volume will usually include some tribute to Monty.
The Vytal Tournament tends to throw out the weird "bracket" a lot, but it isn't a true bracket. All matches are completely randomized and there's no way to predict who will be fighting whom. It takes the form of a single-elimination tournament, so losing once spells the end of your run. The first round reels in teamwork and communication with the entire team to weed out any weak links. The second (doubles) reels on decision-making and tactics to pair off the two members who work best together, and from there the tournament moves on to the final randomized bracket of individual combat, reflecting raw strength and skill. The first two rounds are scheduled in advance, but with randomized combatants, and the singles bracket are randomized on the spot. Eliminations are called both by a ring out and if any individual fighter's Aura is depleted to 15%
Team RWBY's first match is against Team ABRN (Auburn) from Mistral, consisting of Arslan Atlan, Bolin Hori, Reese Chloris, and Nadir Shiko. Though Reese is something of a fan favorite, Team ABRN is not important in the overall series.
There's a couple takeaways from Nora's rant at the noodle shop. Most of it is subtle hints towards her history with Ren, but there's also a little bit of clever foreshadowing for something that happens later.
The first episode of every volume plays the intro at the end, so as to not spoil anything before the first episode itself.

ABRN does appear in the second Tie in novel Before the Dawn. They still don't matter much though.

That was the intro. For every 1st episode they put the intro at the end. By the second episode, the intro starts in the beginning.
11:06 This is my favorite season. The Torney has always been my favorite thing to watch and they showcase so many cool stuff and skills and weapons in this part. I have always loved Yang. At first I did not like her attitude and preferred Ruby yet she really grew on me and there are things that will be interesting to see about her. I have seen up to a point pass this season so no spoiling. I just love how they give each character their own flare and failings and background. I hope I can finish the series with you since Rooster Teeth got nuked but I do hope the videos are still there whatever is left over.
Emerald is also my favorite. Just something about her makes me happy but in a bad way lol

This is the Volume that everyone tends to agree turns up to 11. Just about everything you asked about will be mentioned or explained in this Volume. So buckle up, and grab a notepad if you're the note taking type, because we're in for a RIDE.
By the way, check out that scene with the birds and sun after the scene in the beginning where Ruby is talking to her mom, and look up a photo of Monty's signature.
That scene is homage to Monty Oum, and the birds symbolically spell out his name with the sun forming both the "o"s in his name. A very heartwarming tribute to him.
