I saw Alton Brown do a watermelon this way and I've been doing cantaloupe and watermelons thiis way ever since. Dice it up, put it in a container and it's ready when you are.

Also VERY advisable to WASH the cantaloupe in water before cutting into it. You do not want any possible contamination of the skin to get inside the melon via the knife when you are cutting into the fruit.

It's easier if you scoop the guts out before you cut the skin off.
