Man that looks good and I don't eat pig tails but I will try that.
It's basically like pork belly but with a strong piggy flavor... kinda like how Oxtail has a very beefy flavor....
That looks like a badass version of a classic thai/chinese pork belly dish
the nice fat (90%) to meat (10%) ratio ...
Problem is, butchers don't sell this cheap.
