"Mind of a Chef Techniques with Sean Brock" is a video series that highlights the quintessential spirit of Chef Sean Brock's culinary ideas, themes, and techniques.
How do you get perfectly cooked peas every time? Hint -- it does NOT involve a can opener. A pressure cooker and some spices make Sea Island Red Peas shine, especially when topped with cornbread crumbles.

What kind of pressure cooker did you use? What was the price tag on it?

The video is sponsored by Breville so I imagine it is one they make.

Those are not peas, and water boils at 100.

It does in Celsius, Sean is from the U.S., I have those beans/peas/legumes and they are really small I can see why they are called peas. It is a local southern vernacular.

Water boils at 100C, 212F, and 373K. Additionally, these are technically peas, as they're a type of field pea, which is a species of pea from the same family that your every day pea comes from.

It's the original heirloom pea of South Carolina that migrated here from Africa as a result of the slave trade.
