    I just found a fig tree in my elderly neighbors yard. She is 94 yrs YOUNG. She had forgotten about it until I asked her what kind of tree was being overgrown. We found several figs popping up and out. This would be a treat for her, to make this cake with her figs. 🌻💜🌻💜🌻

      Awe that would be such a lovely thing to do for her! :) Great idea!! I'm so jealous because I have had 2 fig trees in my yard for 8 years and never once has it given me any figs?! I just use the leaves for my cheese trays! Ha! :) xx

      Entertaining With Beth, hmmmm. That is an interesting enigma. I wonder, does the fact that I live in the state of Ohio where we have a winter season where plants go dormant and then in the spring awaken again? This neighbor said she just opened the figs and threw them into her dirt. Voila!!

    I made this without ginger because I’m picky and added cinnamon, I also didn’t even realize I had no eggs until I started so I subbed them with apple sauce and reduced the oil so it wouldn’t be too wet and it was amazing!! I made more later with egg and both ways it was soooo good. This has become my go-to fruit bread recipe because it’s so good and so easy to tweak here and there for the fruits you use. My mom just received a whole bucket of persimmons and I’m fixing to bake them soon. Thank you so much for this recipe.

    My son’s fig tree is producing prodigious numbers of figs, so last night I made fig jam with preserved ginger and today the fig coffee cake. The batter is delicious so I expect the cake will be a hit at our Sunday night Bible study! I understand that fig trees fruit all summer so I will need to find a lot more recipes featuring fresh figs! God bless, Roslyn

    • @EntertainingWithBeth
      @EntertainingWithBeth  6 років тому +1

      Sure you could mix all purpose and whole heat flour (keeping the same quantity) and instead of honey I would use the cane sugar to keep the same texture, and I would go with the same amount of oil, but use the coconut oil, I find coconut oil is better for baking over olive oil. Hi Beth! 🌻
    What a delicious treat for breakfast!
    I do enjoy fresh figs, they're so tasty.
    I made some homemade fig jam with all of my figs.
    A quick question for you Beth ~ can I use some of my fig jam in place of the fresh figs?
    Like some dollops of fig jam around the top of the cake instead?
    Would I have to change anything in your recipe?
    Thank you for your time and any help you can give me.
    Have a nice day Beth! 🌼

    • @EntertainingWithBeth
      @EntertainingWithBeth  6 років тому

      Oh yes that would be great! You absolutely could use the fig jam, that would be great! You probably wouldn't have to change anything else, but maybe check it at 45min-50mins as it may take less time to bake without the weight of the fresh figs. Let me know how it goes! I'm curious because now that's a great idea when figs go out of season, I can always use the jam :) . Love it!!

    • @EntertainingWithBeth

      So glad to hear it was a hit! :) Yes olive oil is heavier than canola or vegetable oil, so it would cause it to result in an oily cake so if you use that again then yes use less I would do 175ml otherwise Vegetable Oil might be better for a less oily cake :) Those figs sound amazing!!

    Mam...what can use instead of eggs

    Omg Crystallized ginger, fig, and cardamom! all of my favorite flavors, and arguably unconventional (for the American pallet). Cardamom is nothing like cinnamon but sure it can serve as a substitute :)

      I know right? Ha! But I think Americans would love all these flavors :) Maybe Allspice would be a closer spice alternative??

      @@EntertainingWithBeth Weird question but if you are 'allergic' to cilantro (it tastes soapy) do you have the same issue with cardamom?

    • @sarahhudson4006

      @@caligulalonghbottom2629 I wouldn't think so - Cardamom is from the same botanical family as ginger and turmeric (in cardamom's case, the seed and pod are used instead of the root). I think the spice you are thinking of is Coriander - which is the seed of the cilantro plant, or sometimes the ground dried root of the same plant. Cilantro usually used to refer to the leaves and the plant is a member of the parsley family (along with fennel, dill, carrots and parsnips)

    Beth, I like when you say, for example,in this episode, “ use oil” and you quickly say why to use oil. We learn and remember the answer too! We aren’t used to being treated like adults! Thank you! 😂😂💖🦩

    I am DEFINITELY keeping my eyes on this recipe ! I have 2 fig trees out front. Last year they produced over 60 pounds of figs. I didn't know what to do with all of them so I made a just ok fig wine. This year, I'm gonna shoot for baked goods. Your recipe is my "GO TO" . I STILL may throw a sign outside telling my neighbors to help themselves LOL. That's how many I will be getting. I have 22 parrots 🦜.
    They all turn their noses away from figs.
    Really ?
    Anyway, 👍 ☝ to your video.

      Ha! WOW! Lucky you!! Wish we were neighbors ha! You can also slice them, pop some blue cheese on top, and pop them under the broiler until it gets all melty, they are really great that way with a glass of red wine or port! :). Enjoy!

      sure you could try apple sauce and a banana to add the moisture :) and maybe just 1/4 cup of coconut oil to get the best texture :)

    Hi, Beth. Your fig cake looks beautiful, just like you and your positive attitude. What's your best tip for making the best fried chicken that's healthy? Have a good day, Beth. Take care of yourself, cutie pie.

      Oh healthy fried chicken, that's a tough one ha! I'd probably try it in an Air Fryer! Those things are great, perfectly fried food with NO OIL! :)

    The reason why I'm on this channel is I have 2 fig bushes that produce over 40 pounds of figs and I have no idea how to use them. Last season, I had enough ripe figs to eat them as they were ripening. This year it is OUT OF CONTROL ! FIG wine is what I'm thinking.
