BETH'S APPLE SPICE CAKE RECIPE
Serves 10-12
INGREDIENTS:
1 ½ cup (270 g) brown sugar
¾ cup (180 ml) vegetable oil
¼ cup (60 ml) molasses
4 eggs
½ cup (120 ml) apple sauce
1 tsp (5 ml) vanilla extract
½ cup (120 ml) water
2 cups (240 g) flour
2 tsp (10 ml) baking powder
1 tsp (5 ml) salt
1 ½ tsp (7.5ml) ground cinnamon
1 ½ tsp (7.5 ml) ground ginger
½ tsp (2.5ml) ground cloves
½ tsp (2.5 ml) nutmeg
For Garnish:
2 Honeycrisp Apples, sliced horizontally into slices
Glaze:
¼ cup (48 g) whipped cream cheese
1 tbsp (7 g) powdered sugar
1 tsp vanilla
1-2 tbsp (15-30ml) milk, or more to reach a pourable consistency
METHOD:
Preheat oven to 200F (93C).
Line a baking sheet with parchment paper. Slice apples into very thin wheels, cutting the apple horizontally.
Place on baking tray in a single layer. Bake for 1 hour, then flip and bake for 1 hour more. Once done, turn off oven, open oven door and allow to cool for 30 mins. Once done keep at room temperature until ready to decorate cake.
Preheat Oven to 350F (175C).
Prepare a Bundt pan with baking spray (preferably the spray that also has flour in it) coating with a pastry brush to get into all the nooks and crannies and set aside.
In a large bowl, mix together the brown sugar, vegetable oil, molasses, 4 eggs, apple sauce, vanilla and water.
In a medium bowl whisk together the flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg.
Slowly add the dry ingredients to the wet ingredients and whisk gently to combine.
Pour batter into prepared Bundt pan. Bake for 35-40 mins until a long skewer comes out clean.
Once completely cooled, transfer to a cooling rack.
Prepare the glaze by mixing the cream cheese with the powdered sugar and vanilla, whisk until smooth. Add milk and whisk until frosting is pourable, may need to add more milk depending upon which brand of cream cheese you use, some brands are denser than others.
Ladle glaze over the top of the cake crown, allowing it to drip over the sides. Top with the dehydrated apples, transfer to cake stand. Enjoy!

Entertaining With Beth i live in London so we have a climate in which we can grow apple, pear, figs, plum, berries, tomatoes, herbs etc. In my garden. In California you can grow varieties of citrus fruits which is very nice too.

Hi Beth, do you think this recipe could handle slightly more ginger to make it a gingerbread cake for Christmas? I love the look of this recipe
It's pretty gingery already but a nice addition would be some cut up candied ginger mixed up in the cake batter 1-2 tbsp OR sprinkle the chopped candied ginger on top of the frosting, just under in the apples and that would be great too! Enjoy!

*Beth this Apple Spice cake recipe is wonderful I love it and need to make it. Every tine I make a bundt cake, it always sticks in the middle 😞 even when I use a knife to release it, and oil it well, there’s always cake stuck in the centre. I’ll try it again making this cake.*
You really cannot go wrong with the Pam Baking Spray with flour :) . And to make sure it's distributed well with a pastry brush and making sure it cools completely before attempting to release it . You can do it! :)

Oh sure It's really just to loosen ever so slightly, with the knife's tip just to be sure it isn't stuck anywhere, pan won't scratch with this gentle approach :)

Oh sure! You could definitely do that too :) It would make a lot of muffins though, maybe 2 dozen unless you cut the recipe in half :) Or 2 dozen muffins may not be a bad idea? Ha!

Hi Beth. I baked this cake today and it's delicious! May I ask, would this be stored on the side on a cake stand or in the fridge? Just curious because of the cream cheese glaze.
Correct once the glaze has been added, place it in the fridge since cream cheese is a dairry product it needs refrigeration. :)

please could you give a substitute for applesauce? would love to make this cake but applesauce is not available where I stay.

If you are willing to go to the effort of peeling and chopping apples you are only a couple of steps from making applesauce. Peel, chop, heat/cook over medium heat for a few minutes, taste and sweeten to your taste. Voila applesauce.
Yes or you could omit it and add 1/4 cup more oil and 1/4 cup more water, that would give them same moistening effect :) . Enjoy!!

I'm not so much of an apple spice cake person. But that's a beautiful bundt!
Oh and also recipes that require apple butter because my tree gave so many apples and I made a lot of apple butter.
