    I prepared some bear I used leeks, onions, garlic and Heniken beer and put it in the oven, made a nice gravy then, I served a side of fondant potatoes, beets and broclini. It was a hit.

      Now we know what we are doing when we harvest are bears this June. Sounds delicious

    Nothing like bear my favorite game meat.
    I personally love the ribs BBQ .
    I cut off both rib cages with meat saw then cut up ribs with a big meat cleaver.
    I then season and boil in big pot until tender in chicken broth.
    Then i cook outside on grill with manzanita or madrona hard wood and apply bbq sause as they brown .
    Mmmmmm.

      It turned out amazing. Yea, just like any industry, they have their bad apples too. We have also dealt with some really good ones too. However, we really enjoy doing it ourselves now.

    What about the worms/ parasites in the bear meat?

      Great question. For black bears you do have to be careful about trichinosis which is a parasite common in bears. Meat must be cooked to 165F and you are fine. Bears that eat a lot of fish (salmon) can also get tapeworms.

      Thank you for watching. Lots of options, the main purpose of braising is to add moisture and flavor.
      You can use beef broth or a mixture of broth and apple juice, you can go with a tomato base, using diced tomatoes mixed with V8 juice, coffee, is a good choice as well as different sodas (coke, Dr Pepper, Root Beer) hope your that helps.

    Wait a minute. You took 90lbs of bear meat to a processor and came away with 17lbs of bear salami? That's why I don't use processors.

      Exactly! We were not happy campers. We had some of the salami they made on the boat we stayed on, so we took the bear meat there but 75% of it we butchered and packaged ourselves while still on the boat. It was supposed to be frozen and sent back to us. It was NOT.
      Not all processors are bad, but we prefer to do our own as well. Thanks for the comment.

      That is sad.I staryed processing my own deer because of this.Also my friend who works a t a butcher told me that they tell people they get their own meat back but in reality they mix all the deer into big batches so you do not actually get track the animal that you brought in.

      Yes. We didn’t have any bear fat. 😏 We would use rendered bear fat for sure but this bear

    baby carrots suck and lack flavor. use full bodied carrots that have not been processed and chlorinated

      @@yevgeniytsarkov7256 Typically bears are fatty enough to not need bacon but this was a spring bear with not much fat, helps it from drying out.

    Exotic Meat Online or Exotic Meat Market San Jose should have black bear, lion, tiger, bison, camel, coyote (like dog meat),
    wild boar, Llama, kangaroo, elk, hawk, antelope, moose, ostrich, peacock, yak, zebra...🐺
