"they want that story and it's like, I don't have that story for you, but like, I can also make you some really good food if you wanna eat it" - she a real one!
I love Sidney's honesty. "I never grew up in a Vietnamese household so I don't have a compelling story to tell, and I can't relate, but I can make some good food" Somebody give her a fish scaler though
I can attest that this restaurant is straight fire! Amazing food, great drinks. And the owners are some of the nicest and community oriented people in San Diego!
I went here after my wife and I got married and they customized the menu for us with a sweet congratulatory message. Such a heartfelt touch not to mention how good the food was. They didn't even show in the video how many other amazing options they have here!
Using the same knife to open boxes and cut ducks is beyond reckless. Opening a box on your prep table with the same gloves you use to handle raw duck is downright dangerous. But hey, I guess it's fine because they're a overpriced “fancy restaurant."
Food looks amazing. For those saying it's French first, that fish is not French. Duck is eaten a lot in Vietnam, unlike in the US. Yes, there are elements of French and a bit of Chinese, but it's definitely Viet the way it's served and even in it's presentation of the noodles (French don't do noodles), fresh herbs (this is extremely Viet as herbs are king of the cuisine there), veggies, dips, etc.
@@organizedchaos4559 Pretty sure you didn't grow up Viet. I did. We ate roast duck and boiled duck growing up. There's also various duck noodle soup dishes. None of those were French.
That fried fish with ginger fish sauce need some shredded green mango to beat the greasiness, that’s how we Vietnamese eat fried fishes with ginger fish sauce
I'm Viet. Generally a traditionalist when it comes to Viet restaurants. But I would drive down from LA, just to check it out. I make fusion stuff at home, out of necessity or sheer laziness, so it would be fun to see how I could push my home cooking in a new direction.
As a local this place is so overrated. 78 dollars for the dry aged duck and 54 dollars for the whole fried fish. A whole rockfish costs 5 dollars at the docks btw and less than 20 at local Mexican restaurants. Oh also they add a 20% service charge on your check and then expect you to tip afterwards.
You’re probably not their target clientele I’m not either, it’s for people who are not familiar with Vietnamese home cooked flavor, I would bet money none of their customers are Vietnamese. Whole fried fish with fish sauce that’s a weeknight meal at home for Vietnamese .
You JUST made me DELETE the text to my wife saying I had to eat here!! 🤟 THANKS for that! That is all 💯 DEALBREAKER info!! Shame on them, ESPECIALLY w that BS GRATUITY!! You cannot get away with that, and definitely NEVER in an economy this hellish! Ssshame!!! 😖👎👎👎
I'm Vietnamese, everything looks amazing but none of the dishes shown are really "Vietnamese" at all. That's totally fine but I feel like they're trying to push these dishes to be mainly Vietnamese while they're really not
Food looks good, people seem nice and I'd give it a try if I was in the area.... but... As someone born in Vietnam, visits and travels back to Vietnam almost yearly and also on the flip side fishes rock fish (when in season) this restaurant is as Vietnamese as Olive garden. It is Californian, which is fine but it is so far from Vietnamese it's like saying spaghetti with meatballs and tomato sauce is chinese because noodles were made in China. Vegan fish sauce?????
Ive lived in little Saigon my whole life, going to Vietnamese friends houses as a kid eating the food their parents cooked, so it was pretty much second nature
In Vietnam duck is a very popular ingredient? I’m not sure if that’s accurate. My girl is Vietnamese. Her mom drops off home cooked viet food to our apartment every weekend and I’ve never once had duck. It’s a lot of pork, shrimp, noodles, soup, pho, bun thit nong, spring rolls, etc. And also I noticed they use the red boat brand fish sauce. That’s a huge no no apparently in a Vietnamese household. Red boat brand fish sauce to a viet is like pineapple on pizza to an Italian apparently lol
Yes, duck is popular in Vietnam. Not so much so in the US because it's harder and more expensive to come by these days. But it is eaten roasted, boiled, in noodle dishes, etc.
"they want that story and it's like, I don't have that story for you, but like, I can also make you some really good food if you wanna eat it" - she a real one!

THE CHEFS ARE OUTSTANDING. THE FOOD IS AMAZING. MY FAVORITE RESTAURANT IN SAN DIEGO
Opening a restaurant on the tail end of a pandemic right into a recession and still thrive , the food must be amazing.
There was no recession

Two consecutive quarters of a generally slowing economy defines a recession, that’s the first 6 months of 2022, go educate yourself.
it's all fake every video is like this a stupid story and how popular they are

I like the humble friendly chef always ask opinions from his staff
I've been lucky to go there 2 times while i was in san diego, they are on the Michelin Guide as well for must visits.
That whole fish!!! Bring it on!! Man that looks SO GOOD!!
Whole fish shared with friends is definitely one of my favorite restaurant meals
The fish don't agree.

WOW , so much PREP , real people doing amazing for their customers. BT 🇨🇦
This duck looks so good
As a local, these san diego videos have been awesome!!
The duck is super Vietnamese with the herbs and vermicelli now haha I love it Might have to try
Well done guys. It’s very nice to see professionals. Congratulations to you.
wow. I might have to travel to CA just for that duck ....I love how slow the process is
That fried fish with ginger fish sauce need some shredded green mango to beat the greasiness, that’s how we Vietnamese eat fried fishes with ginger fish sauce
Duck is the best bird I had. And I only wished that more people would eat it. Cause the taste is impeccable
Wow! That big fish is Rock Cod. My favorite fish.
Everything looks delicious
Amazing video! Food looks 🔥
Buy the electric fish scaller. No need manual scalling. So cucumbersome
It all looks amazingly delicious!
Very cool. Can’t wait to stop by!
The tartare is amazing!!
duck is so hyped in restaurants simply because few people like making it at home.
The duck looks incredible
Love how he downplays the 2000 Treager grill lol... " place it on our little Treager grill for 30 minutes 😂"
Wow this place looks amazing!
WOW wish this place was here in Australia what great food amazing
They do not look amateurs to me 😊
But I agree that the food is VERY fusion 9:22 not much Vietnamese here.

Loving the SD videos
Lots of hype. The service was OK, and the food was insanely overpriced
I am impressed!
I've had that duck several times here, very delicious
The fish looks tempting, I like the presentation. I have had duck + 100 times, but not fully get it, perhaps its the texture?
Really craving some fish right now. I've never had Duck before.
Watching from Chicago.
Prices with the dishes would be cool eater
On god that duck looks incredible
Look delicious 😋
Where is it? I can eat this all day
I always feel bad for chefs working under owners who have zero restaurant experience.
awwww boohoo
How are you so sure they don’t have restaurant experience?
07:37 is the moment that says it all. hard to put one's finger on it, but i'd rather eat elsewhere
They started Crab Hut and expanded to 3 restaurants before opening Kingfisher
2:08 what's interesting is that female Rockfish don't reach sexual maturity until age 25 and Rockfish can live for 100 - 200+ years.
Nice work.
As someone, who is from Phu Quoc. When I heard “ vegan fish sauce”. Definitely, not what my parents or your parents ate.
2:00 she needs that steel fish scaler that looks like a brush
The owners look like they run a Vietnamese mafia😹💪🏽
Looks good.
you go against the scales. Try to hold the fish by the head. It makes much difference
Damn I live right like 3 minutes away and didn’t know this place existed. I’ll go asap and update
Looks incredible but y’all should get a proper fish scalee
you can eat the fried scales
I wanna take those dishes to go

Scaling a fish with small kitchen knife?! That's not optimal at all. There is way more efficient tools to do scaling 5x faster.
