For me it's not the calmness but the passion. Gennero doesn't make these videos for the money or fame, he does it because he loves cooking and if he can't cook for the world, he will show the world how to cook it themselves.

I'm sure this recipe will make good stock, superior to store bought stocks I reckon.
However in the cooking school I'm studying in right now we do 2 things a bit differently.
1. We NEVER add salt to our stocks, reason being in some way or another the stocks we use will always be reduced to strengthen it's innate flavour. If theres too much salt at the beginning, then whatever you use your stock for is most probably going to be a bit too salty. You can always season your dishes according to your taste later on, but it is much more difficult to fix an already salty stock.
2. We always trim every last bit of fat off of the chicken carcass prior to boiling it, because if you boil a fatty chicken then a lot of the fat is gonna create scum which will float upwards, Gennaro didn't mention this but you'll have to skim as much of the scum off of your stock. If you don't then you'll end up with a cloudy greasy looking stock.
Thats my 2 cents. In essence, love your stock, and it will love you right back!
1. You can add a small portion of salt in the beginning. This won't become over salty when you reduce later on. Salt added at the end doesn't integrate and isn't the same as salt added in the beginning which as a chance to mingle with the primary ingredients.
2. Fat does not cause scum. What causes scum is blood, especially from splintered bones. So cutting the bones is not a good idea if you want a clean stock. Fat actually adds flavor. It's much better to cook with the fat on, form a layer or cap of fat (skim the scum, not the fat), then remove the fat after cooling.
I learned all this from Judy Roger's excellent Zuni Cafe cookbook.
Fair enough, we all have our own ways of doing things. Whatever your method may be, as long as it produces good results then I'm all for it. Cheers for the the extra knowledge.

Perfect. Confirmed. Done it so many times. Only 1 thing i do different - I use chicken breast instead. Meat gets so many wonderful flavors. Even with my hatred to boiled chicken - one made by this recipe is tasty and healthy.

Love you Gennaro! Okay people, since u know so much. He is making BROTH. Apparently in Italy they use the term "stock". All of you experts know that it takes much longer to make stock. He is excellent, I will turn to his vid's for all of my authentic Italian recipes.
