I think the reason kisame respected itachi was because itachi didnt see him as a monster but another human being. I remember a gag in a akatsuki foced episode where kisame remarked he was a little sad about the way he looked. Itachi was probably the first person to look past his looks and take notice that kisame is human not some shark monster. Also another reason i think itachi and kisame got along is because itachi wasnt in it for power or money, he was in the akatsuki to protect sasuke and i really dont think he would kill just kill someone.
