Sunflower seeds in place of barley in a soup sounds interesting. I'll have to try that. Avocado oil is VERY expensive here in the UK. I'm so precious with my bottle. :) Luckily EVOO is not that expensive and lard is very cheap here.
I was hesitant about adding the sunflower seeds, but amazed at how it all came together and turned out. Yes, the avocado oil we used to buy was ridiculous and I never wanted to use it for anything 😂 but finally the price started coming down and we found a more affordable option. I love using EVOO as well and where I grew up, everyone used lard for frying.
@@SuzAndTheCrew I'm hoping that one day avocado oil will become reasonably priced here in the UK... My bottle is 250ml (about 8 fl oz?) and cost almost GBP3 and it's the cheapest I can find. Most others I've seen are around GBP5 for 250ml! I really like the flavors of butter and EVOO, but they get smokey and burn more easily when pan-frying at higher temp, so I often use lard for that sort of cooking, except steak gets the special treatment of avocado oil. :D
Yikes! That is expensive! I LOVE cooking wi th olive oil and butter but agree about the smoke point (which is why I end up using so much avocado oil 😂). I usually only fry stuff when cooking and filming though. I LOVE cooking steaks in well-seasoned cast iron with straight butter; I’ll have to try adding a little avocado oil to them!! (Once the price of steaks comes back down 😬).
@@SuzAndTheCrew I don't think the avocado oil adds any flavor to the steak tbh. But I like it for its high smoking point (doesn't set off my fire alarm). I add some butter at the end for flavor. :)

It tastes delicious each time but I do have a problem, why do I have so much juice at the bottom of my baking pan? I noticed that yours came out without that much juice at the bottom.
Yay! So glad you enjoyed it! 💜 Are you talking about the Broccoli Bacon Chicken Casserole? If you are, it’s probably liquid coming from your broccoli. I always pre-steam my broccoli a little to get some of the excess liquid out before I put it into the casserole.

I guess if the chicken is very juicy, then when you add the salty bacon, it draws some of the liquid out of it. Glad it still tasted good! I’m sure you’ll get it figured out. Thanks so much for letting me know how it turned out!💜

That is difficult! I could definitely go without broccoli and avocado, if I had to, but cauliflower is a tougher one, on keto. Zucchini is an awesome substitute though!
