Waiting on Baby & Canning Potatoes in The Tiny Cabin

  • I believe I called ourselves, "big potato eaters", at least 4 times in this video.
    It's true though! And it is a good thing that it is true because potatoes are one of the best things to grow in our area of Alaska. Today, I am canning up a 20lb bag of potatoes to add to our winter stores and talking through some plans as we wait on the baby!
    Filming this, I would have been 37 weeks pregnant. At the time of posting, I will be about 39 weeks pregnant! It is almost time for us to head to town and count the minutes until we are parents.
    While my favorite videos to share are of our homestead and cabin progress, we have put a decent stop over at the property as it gets colder and the snow continues to add up. That being said, preserving food and prepping for the future is a big part of homesteading as well! I cannot wait to be growing in my own garden and canning food that I grew myself. For now, buying in bulk and getting it preserved is a big help in this life currently.
    I was planning on sharing the recipe I used for this canning video but I ended up bouncing between a few since I bought the dreaded russet potatoes to can. I did allow them to soak for 2 hours to hopefully remove the starch and then used warm to hot water in the jars but it was still technically a raw pack. Maybe it's pregnancy brain, maybe it's, "Grandma wouldn't be overly stressed about a perfect recipe, right?"
    Stay tuned for our little one coming soon! Our due date is December 12th so we are making videos ahead of time to give us a good break to bond with our first baby. We will definitely post as soon as we can to welcome the little one though!

    I rarely plug other channels, but Ruthann Zimmerman on homesteading with the Zimmermans is my go to when it comes to growing, canning or putting up any type of food. She is very down to earth, practical and offers free downloads. She also debunks a lot of the crazy that comes with canning.

    My husband is from Ireland. We MUST have potatoes!! Lol looks great! I'm a trained chef dear and I peel potatoes the same way!lol

    You can use regular salt, just not iodized and really you could use iodized but it will give your products an added color. Salt is for flavor not safety.

    Becca, you can use regular salt with no iodine or kosher salt. If you double layer your jars you should get another rack to put in-between so that your jars don't break. Nice canning video. Praying for a good delivery.

    Many Alaskans have a chest freezer outside.....needs no power since it is cold enough outside. Canning the salmon is better than freezing since freezing salmon for best taste and texture does not last long frozen. When canning salmon, you can do such a variety....adding tablespoon of tomatoe, hot sauce, and so on....gives you variety.

    It's always great to see your videos and know you're doing okay. I love your bright outlook and smiles. You're both such hard workers and are doing a great job! Helpful hints: I use salt without iodine for canning and it works great. A rack between layers of jars in your pressure canner is much safer. That being said...I look forward to seeing you next week! 😊❤

    I also peel towards me I have peeled away from me but makes a big mess. Had a fantastic potato crop this year we only plant red potatoes Canned enough for the two of us along with mixing some with green beans and corn.     Hey pretty Becca ❤ We eat a lot of potatoes as well and we aren't picky however I prefer Yukon gold. But whatever is the better buy is always a good thing! We also use a lot of rice. It stores really easy and lasts forever and is fairly cheap. We also make a lot of beans and lentils which are a great source of protein!

    Last I seen you and Levi were nearly snowed in. You were leaving the cabin to deliver the baby. Now this food prep. Where did you get the salmon? Potatoes are easy to grow and great to have available. Will we see the baby soon Becca ?

      As soon as it makes an appearance! (And we settle back in.) No baby yet, just a trial run out of the cabins! We got the salmon out of the Kenai River this summer. I have a few videos from around July of it all. 😁

      Levi has Baffins, and I have the old military bunny boots! The weather has been too warm to truly test each though.

    Whene the water is stil hot, from canning, can you put snow in it. So it melds for your wassingmachine?

      I love that idea! I'll definitely do it. Anything to reuse and save as much water as I can.
