  • Thinking you have to do ALL the canning steps on the same day?? Nope!
    Mom came over to help me peel 80 pounds of potatoes for canning, which took just over an hour. Then we washed and bagged them to be cut and canned in a few days.
    I’ve been doing potatoes this way for years, and it’s amazing. Sometimes the potatoes will get a little brown in the bags, but when you can them, they come back to the perfect color, with zero effect on taste!

    I’m so thankful for generational living. With my mom’s help, the potatoes went far faster (and with more fun) than if I had done them alone…

    Cut them in one inch or smaller Wash them good get white milky water off the put in jar with spoon full salt cann for I believe 35 minutes

    If potatoes are put in solution of water/citric acid, they will stay white.

    I didn't soak my potatoes first and they taste terrible. I'm definitely going to soak them from now on. 😢

    How many quarts did you get with that much potatoes

      It averages to about 2-2.5 pounds of potatoes per quart, depending on how big the chunks are and how much you pack them in!

      I think: you can peel and get your potatoes ready and store them away till the next day when you have more strength.

    Hack? Sorry, but is terrible. They're turning brown. The first real job i ever had, at 17 was in a restaurant. I was taught to put the peeled tadders in an ice water bath to prevent oxidization. Thats tadder pealing 101 fcol... use 5gal buckets. 👍

    Am I the only one that uses my peeler in the motion of a peeling knife? I never just hack away at the end of the thing…away from me…like I see here… 🤯

    Do you ever can potatoes in 1/2 gallon jars? If so... for how long?

      I haven't ever, but it looks like it would be the same time as for the quarts.

      It's not recommended to can in half gallon jars.

    potatoes alsk store well if you dont wash them though... let them dry then just... store as-is. knowing this if i ever try growing them, wont never catch me canning. lazy life fr

      Yes aware of that, but it doesn’t work well in Texas. So we do grow our own, and we can them to protect the harvest. But, to each their own!

      Well it would be if peeling was the hack... but it was the fact that you can peel them several days in advance, not just the day of ;-)

      @@AModernHomestead : I would actually have to consider the fact that it is pretty handy to be able to break up a task that takes a long time to do.
      Have you ever considered not peeling at all?

      @@daphneraven6745 Yes, we have left the peels on before, but for the variety that we grow, the peels come off and sink to the bottom - makes it looks weird and causes the potatoes to have an odd texture when we eat them. But really, peeling is about an hour task, so it's worth it to have nice looking jars and potatoes that don't have a weird texture.
      I know a lot of people how don't peel, but for those that do, I like to share this little tip :-)

      @@AModernHomestead : Thank you very much for taking the time to sort me out. I didn’t know that was even possible. I can totally see why a person wouldn’t want something in their food that made it appear to be unappetizing.
