- Super crispy fried wonton. 💥
A fried wonton should be light and super crispy. It should break easily in the mouth and release juicy flavorful fillings. 😋
To achieve this I use the thin alkaline wonton skin which is different from dumplings skins. Dumpling skin is not so suitable for frying. They form big blisters and tend to be slightly tough and thick.
To make this easy vegan/vegetarian recipe you will need
Ingredients
5 rehydrated or fresh shiitake mushrooms diced finely
1 block firm tofu, smashed
1/2 carrot, diced finely
Chinese parsley diced
2 teaspoon minced ginger
Wonton skin
Tofu marinade
2 tsp soy sauce
1 tsp of pepper
Fillings marinade
1 tablespoon soy sauce
1 teaspoon white pepper
2 tsp sesame oil
2 tsp sugar
1 tablespoon corn / potato starch
Smashed tofu and marinade for 10 minutes, pan fry without oil. Remove when tofu is brown.
In a large bowl mix all ingredients together.
Place wonton skins in a diamond shape. Wet the outer edge with water. Scoop a spoonful of fillings into the centre and fold away from you. Grab the two sides and pull them together to meet .
Heat oil and deep fry wontons.
Serve with sauce of your choice.
