I made this cake and it was a hit! I made some minor changes to the frosting recipe. Instead of cream cheese, I used two full cups of butter, just so the cake could be left at room temperature. I also used a full cup of brown sugar (about 200 grams) and increased the vanilla to a tablespoon and the powdered sugar to 2 lbs (about 900 grams), so that the cake could have thicker frosting. Helpful hint: when creaming butter and brown sugar (and cream cheese if using that), cream it for about 4-5 minutes on medium high speed (I used level 6 on my KitchenAid), stopping periodically to scrape down the bowl, and then let the mixture rest five minutes before adding powdered sugar. This will help the brown sugar dissolve and prevent any grittiness in the finished product! 😀
While I think a wicked smooth perfectly leveled cake is pretty I actually like when cakes are not super smooth and look rustic or swirled or even roughly frosted for texture. Looks so yummy!
@@SugarSpunRun … I did. The favor was so rich I literally could not stop eating it! I love good cake with morning coffee, lunch desserts, and evening cup of tea. 🤗😁
Definitely making this! I have made your French silk pie recipe twice already and am making one for thanksgiving this year. Thank you so much for these videos.
Another great recipe! I think another way to know your cakes are done is when they just start leaving the sides of the pan..All of yours did that perfectly. I find that to be a foolproof method even before poking them!!!
Made it and love it!! I was so sure it wasn't going to have enough frosting, but I was wrong. It is the perfect amount and balanced it's just wonderful. Thank you for sharing!
What a delicious recipe! If you’re not too good at eye balling your batter into your pans evenly... Try using a digital scale. (I’ve been a professional Pastry Chef since 1984, the only reason l give little tidbits of advice. 😉)
Does this cake freeze well? Because I want it for Christmas Day but am busier a few days before Christmas. I thought I would just decorate the frozen cake sheets the day before, with the frosting.
Hi Sam, I baked the batter in a traybake pan and it was perfect, the whole batter fit and I baked it for 20 to 25 minutes and it turned out beautifully and soooo tasty! I halved the icing recipe for the top and it was just enough, thank you. Jayne
You will use butter in both the cake and the frosting. The cake requires 1.5 sticks (12 TBSP) and the frosting requires another stick, so 2.5 sticks of butter total. :)
Instead of using butter, could I use an equal amount (in grams) of applesauce? I have just heard cakes with butter get really hard in the fridge, but this cake probably needs to go in the fridge due to the cream cheese in the frosting.

So happy to hear it was such a hit, thank you so much for trying my recipe and sharing your tips! 🥰💕
Your kitchen must have smelled like heaven all the time you were making this.
It definitely did 😊

Sometimes there's something about a "less than perfect looking cake" that makes it taste better. Seems more real if you ask me. :)
🙂

Sometimes I use my scale, but since this one was just going to family, I didn't care too much about the layers being super even 😊
looks Divine! thank you! 🍦
Oh my goodness- yummmo I will have to make it if I want some 😊
I hope you love it 😍
Thank you for the ricepe excellent BRAVO ❤
You're welcome! Enjoy! :)
Making this for Christmas! Thanks 🎄
Hope you like it!
Looks delicious 😋
Thank you 😋
Wonderful thanks
Hi looks delicious. Would it be okay to use a regular baking dish? I'm not good at layer cakes. Thank you.
This will fit in a 9 x 13. :)
Thank you Sam very good
You're welcome! Enjoy! :)
Does this cake freeze well? Because I want it for Christmas Day but am busier a few days before Christmas. I thought I would just decorate the frozen cake sheets the day before, with the frosting.
That should work just fine. :)
😋
Another delicious spice cake I will definitely try, but do you think it could be baked in a traybake pan? Thank you Sam 😋💐
That should work just fine. If the pan is more than 3/4 of the way full just discard any excess batter. :)
@@SugarSpunRun excellent, thank you 🤩

Thank you 😋
sam very nice cake.
Thank you! :)
Looks delicious. Can you substitute the pans with a bundt cake pan?
That should work just fine, but I'm not sure on a bake time. :)
So do you use just one stick of butter? I'm so going to be baking this in the next week. Thank you, Thank you for this recipe 😘
There is a link to the recipe in the description. There is butter in the cake batter AND in the frosting.
You will use butter in both the cake and the frosting. The cake requires 1.5 sticks (12 TBSP) and the frosting requires another stick, so 2.5 sticks of butter total. :)
Yes I have the recipe 😋 And I'm soooooo looking forward to making this cake. I know it will be delicious!!! Thank you!
If I don’t have sour cream - can I use Greek yogurt?? And could I add salted caramel in the middle as well?
Full fat Greek yogurt will work. You’ll want to put a dam around the caramel. 😊
All I have is an 9x13 pan . Is the batter enough to fill the pan?
Yes this will fit in a 9 x 13. :)
Instead of using butter, could I use an equal amount (in grams) of applesauce? I have just heard cakes with butter get really hard in the fridge, but this cake probably needs to go in the fridge due to the cream cheese in the frosting.
I'm not sure how applesauce will work here. :(
Can I use 9” pans? All I have
Sure thing! :)
Can I make this recipe in the microwave in a silicone mold? And can I add raisins and candied fruit to turn this into a fruitcake?
The add ins will work just don’t overload the batter. I’m not sure how it will work in a microwave in silicone. I’ve never tried it.
How many kg of sponge in total comes out of this batch?
I have never weighed it so I’m not sure.
🙂
Instead of oil can I use avocado?
Avocado oil has a bit of it's own flavor it will ultimately add to the cake but it will work here. :)
Can't I use sugar instead of the molasses?
No, molasses is critical here 😊
@@SugarSpunRun lol, thanks much. Understand.
No
That poor stand mixer gets no love or attention 😂
🤣
