    I've made this recipe twice. Once with boiling the 7 cloves garlic, and next time without. Overall, I DON'T recommend boiling the garlic. Instead reduce the cloves to 3-4, cut them in half, discard the inner stem/shoot, mince it, and add it to the blender with the cooked chickpeas etc. The raw garlic has soooo much amazing flavor that is almost completely lost if you boil it.

    Thanks, Alon Shaya. Clear and detailed instructions. My hummus have come out great. The family loves it. I see some complaints about the baking soda. I have used as directed and am ok with it. Appreciate your video.

    I wouldn’t call it a classic hummus, but I would say it’s a fully loaded version. Every middle eastern culture has its own variation whether it’s the Palestinians, Syrians, Lebanese, Israelis, Egyptians and everyone else in the Middle East. Actually every household does it differently. The base ingredients for hummus bi tahini is chick peas, tahini, garlic, and lemon juice. Everything else is optional for taste. Some people like a grittier texture, some people like it creamy, some people like to add cumin, some people like to blend in olive oil instead of putting it on top. Some people find the garlic to strong

    Guys, it’s okay to make YOUR version of ANY recipe no matter the place of origin. Being different on all levels, in every way no matter who, what, when, where or why is what makes the world go round. Who would have thought that hummus would create such division??....it’s just hummus. It’s really just hummus...

      Neither is Israel occupying anyone as there is no country that exists called Palestine and there never has been throughout the entirety of human history. Ironically it's the Arabic nations that have tried time and time and time and time again to erase the existence of Israel and its culture ever since it was founded.     Hummus literally means "Chickpeas". The name for this mashed chickpeas thing is Msabaha, they call it that in Syria because that's its origin. Neighbouring countries simply call it by its main ingredient = Chickpeas = Hummus. Most middle eastern things are thought to be Lebanese because Lebanese civil war refugees had 4 decades naturally labeling every middle eastern thing Lebanese.
    Mashed Chickpeas with "Tahina", which is simply Sesame extract, and Garlic and Lemon juice is not "Chickpeas" it's an old Syrian food named Msabaha. And I bet Chinese and Indians made this food long before Syrians thought of it and influenced the Lavant, of which capital was Damascus, the capital of current Syria, by their commercial travels to the region, the final destination of the old silk road.

    As a Jew, I’m proud that someone like Alon is enchanted by Arab- Levantine gastronomy, because everything that was on that table is representative of Arab or Palestinian food, not Israeli. On a second note, his hummus wouldn’t pass the test in a country like Lebanon where they master this type of cooking.. I got the chance to go study at the American U.of Beirut, a city that beats any place I’ve been to when it comes to eating and outing.. Lebanon and its people are most amazing and generous. We ought to work toward bringing our people closer starting by acknowledging ‘the other’.. we have so much in common. I love Arabs and their culture.

    Why is it that when we speak of hummus Israel is mentioned? Hummus is an arabic dish (a staple dish in Lebanon). Hummus in arabic means chickpeas; Israel has no claim whatsoever on this arabic dish...

      Surely this will free Palestine. Oh wait, it does jack sh*t. Hummus isn’t an Arab dish. At all. What. So. Ever. It’s a MENA and mediterranean dish, and I know this will break you’re brain, but when we were forced into diaspora, some of us landed in places like Iran, Lebanon, Greece, Turkey, Egypt etc. The majority of Jews in Israel are refugees or descendants of refugees from those countries. If you want to help Palestinian people, don’t whine about a common food for many, many, many people that aren’t Arab across the regions mentioned, and actually help them.

      I’d go to an Israeli restaurant, but not an arab restaurant. If I want an arab to prepare my food, I’ll go to frickin’ Syria, or something. Arabs make the worst falafel, and I’m sure their hummus sucks too.

I've been to Switzerland and have tried the worst flafels and Arabic dishes which were highly rated in trip advisor. Never judge a type of food out of a restaurant, try authentic ones that are home made. Especially if you're living in the west.

      It's a Levantine dish, and where have Jews lived for the last 2500-3500 years? The Levant! The birthplace of hummus. When did Arabs arrive to these places? More than 1000-2000 years *later* . It's both our peoples food, Levantine. Therefore also Phoenician food, Aramean food etc.
