I make a similar sandwich although not as large with cinnamon raisin bread instead of the white bread and a little maple syrup and butter on the inside of the bottom piece of bread. It's next level.

Hello Mr. A B. Where I live at, Texas Toast is a little hard to find. When I worked in a kitchen from 1980 to 1996...we made it just for French Toast Sandwiches etc. Just like way you make it. Haven't had French Toast since 1995. Thank you for taking me back to those days.
Looks delicious. I would only do one thing differently. I like my scrambled eggs really soft, so I would turn the burners off before adding the eggs. That would give me more control in slowing down their cooking. Eating that sandwich would be all that I needed all day!
