    Thanks Helen, I was looking for exactly this recipe! I have made a bunch of vegetarian/vegan cia gio but I was missing the sticky ingredient to replace the ground meat. Can't wait to try. Thanks again for this completely vegan version.

    I made these today and they were DELICIOUS! I was a little skeptical about veggie roll at first, but man was I glad I made them. Definitely the best veggie rolls I've ever had. Now I no longer have to worry about what to make my vegetarian friends. Thanks Helen !

    Helen !! It's what I made today ! Without even knowing you will do that ! Based on your recipe ! With smoked tofu, shiitake, and red cabbage ! Also I used red rice Thai vermicelli ! Incredible !

    Hey. I'm brazilian and I ate Vietnamese food in a restaurant in Ypsilanti (Michigan) near to Detroit, it's called Dalat, when I was visiting some friends and it was the most delicious food that I ever ate in my life. The vietnamese spring rolls and pho are so tasty, so delicious I'm glad that now I can try to cook the vietnamese recipes at home. Thank you so much.

    The mung beans really made the texture feel like there's minced meat in it, and it's great without having any animals harmed for this delicious food :D

    What an interesting clever parchment paper trick! I bet using it that way in non-stick coated pans protects the food from the teflon and other chemicals they use to make those pans non-stick! I bet if you could fry an egg on a piece of parchment paper lining other pans, there would be no reason to ever need a non-stick pan again! Instead people could just use parchment paper on stainless or cast iron or other metal pans.

    I just realized that leek is called "boa rô" in vietnamese because the French introduced leek to Vietnam and leek is called "poireaux" in french.

    How do i fry them so they dont fall apart? Tried making them 3 times now, all goes great till i put them on the pan... They just break and fall apart when trying to flip/move them ghhh. Please help?

    If we freeze the not cooked egg rolls , so when we want to fry them , do we defrost them first? Or fry them right away when they are till frozen? What is the best way to do?

    I will try the dipping in sugar+lime juice water trick and the baking paper trick next time I make spring rolls. It always irks me that rice paper spring rolls are never quite as golden as I want them to.
