    Thanks Helen, I was looking for exactly this recipe! I have made a bunch of vegetarian/vegan cia gio but I was missing the sticky ingredient to replace the ground meat. Can't wait to try. Thanks again for this completely vegan version.

    I made these today and they were DELICIOUS! I was a little skeptical about veggie roll at first, but man was I glad I made them. Definitely the best veggie rolls I've ever had. Now I no longer have to worry about what to make my vegetarian friends. Thanks Helen !

    Hey. I'm brazilian and I ate Vietnamese food in a restaurant in Ypsilanti (Michigan) near to Detroit, it's called Dalat, when I was visiting some friends and it was the most delicious food that I ever ate in my life. The vietnamese spring rolls and pho are so tasty, so delicious I'm glad that now I can try to cook the vietnamese recipes at home. Thank you so much.

    I made this yesterday, baked instead of fried not as good but still pretty tasty. Unfortunately I had to substitute a few of the ingredients but the video was very helpful.

    If we freeze the not cooked egg rolls , so when we want to fry them , do we defrost them first? Or fry them right away when they are till frozen? What is the best way to do?

      Yes you can. But try to separate the rolls as they may stick

      I would not recommend freezing it. The reason is when you freeze the eggrolls sometimes they crack and ice will form around them. I recommend to flash fry them first but not fry to golden then put them in the freezer. When you are ready to eat bring them out and defrost the eggrolls then fry until they are golden brown. That was the method that my mother made when she is hosting a party with many dishes to be made in the same day. Gives it a try to see if the theory work!

    I will try the dipping in sugar+lime juice water trick and the baking paper trick next time I make spring rolls. It always irks me that rice paper spring rolls are never quite as golden as I want them to.

    What an interesting clever parchment paper trick! I bet using it that way in non-stick coated pans protects the food from the teflon and other chemicals they use to make those pans non-stick! I bet if you could fry an egg on a piece of parchment paper lining other pans, there would be no reason to ever need a non-stick pan again! Instead people could just use parchment paper on stainless or cast iron or other metal pans.

    How do i fry them so they dont fall apart? Tried making them 3 times now, all goes great till i put them on the pan... They just break and fall apart when trying to flip/move them ghhh. Please help?

    Hi Helen, m có thắc mắc thế này: đối với vỏ bánh bía khi chiên ko dính vào nhau, nhưng ngược lại bánh tráng thì dính vô cùng. Mình đã thử cuốn tại nhà, cũng như mua sẵn ở siêu thị. Cả 2 loại này đều bị dính như nhau. Có cách nào khác phục ko Helen?

    I have vegan fish sauce at home. What's a yummy dipping sauce I can make with the fish sauce to dip these spring rolls in? Does anyone know.

      Hi there, you can make sweet and sour fish sauce for dipping. Below is a recipe that I use for my non-vegan dipping sauce:
      - 1 clove garlic, 1 red chilli (thai chilli), 2 tbs sugar: put those in a mortar and crush them really well
      - add in 1 tbs water, 2 tbs fish sauce, 1 tbs lime juice (or lemon juice) and mix well.
      That's it. You might want to use less or more fish sauce depending on how salty your fish sauce is. In general, the ratio is: 2 sugar, 2 fish sauce, 1 lemon juice.

    How do you prevent the springs made with rice paper from becoming too soggy too fast? Whenever I've made it, within 5 minutes of taking it out of the oil, it becomes soggy and really oily, and not as golden brown.

      You might have frìed under too low heat. Try with medium heat next time and avoid wet ingredients in the filling
