I think she forgot to mention that at the beginning. You can simply skip the first part and use premade turkey /chicken stock or a bouillon Cube of some sort. Great video!

God help them...they'd really flip out if they knew how much food was wasted at their local favourite restaurant. Just check the dumpsters to see all the meals that were sent back and tossed into the trash. Better yet, how many leftovers went into the trash at their own homes?

Your broth looks excellent. My mom used to make turkey soup after every Thanksgiving. She'd make the broth the same way but would only halve a large onion with the skin on it and same with carrots, no peeling as it adds color. The bay leaves always went in while making the stock. Once that was strained and ready, she'd always stir in one packet of turkey soup gravy mix (any kind), a large serving spoon worth of stuffing, homemade egg noodle, onion, celery, carrots, mushrooms, black olives and of course...the turkey! Watching your recipe has convinced me to make it this year for my family. Thank you!

It looks like a great recipe. I make turkey soup using a similar recipe. Though one thing I do differently is cook my rice, noodles, barley ect seperately & add what I want to each serving. The pasta or rice tends to keep cooking in the hot soup & turns to mush when you reheat leftovers.
I used to use the strainer from my pasta pot in my 4 gallon kettle. It kept the carcass and seasonings together without having to strain out ingredients
Someone mentioned browning the bones first and add a little vinegar, it brings out the morrow in the bones. Looks good, I will be making this when I finish my turkey. Thanks
Kimmy I recently began making my stock in my big crockpot. I put it on right away that evening and add all the same yummy vegetables and herbs then cook on low like 24 hours. Strain and voila yummy rich broth. I do chicken carcasses the same way. You are awesome I have enjoyed watching many of your videos the past few weeks Happy Thanksgiving 🦃🍽🍁

I just made this soup last week. Turned out great! 😋 I added tiny noodles. Who remembers Mrs Grass noodle soup? Nice touch. Hadn’t thought of Orzo in a long time.
She did the stock correctly. The flavor is almost completely gone from the veggies she first used, so there was no waste in discarding it. STOCK IS NOT THE SAME AS BROTH. If you do not understand the difference yet you should learn your way around the kitchen. And any leftover turkey boiled on the bones to make the gelatinous bone stock is also flavorless after the long simmer. That would be discarded as well. Good job Lady!!!!!!!

Once I made some and put the bones in the oven for about an hr on very low heat (maybe 150 degrees), and once they start getting smokey, i take them out and then continue to use them pretty much how you did. it sort of helps give that oven taste to the soup.

I took off any big chunks of meat and any meat I wanted for leftover or add to the soup later. I put enough water on to just cover the bones. I'm not sure if it would be watered down but o wanted a strong turkey stock. Herbs are key! Have fun!
Nice, but bone broth is superior to stock. The only difference is to add apple cider vinegar (like Bragg's) which extracts the gelatin/collagen from the bones. It makes all the difference.
I cook mine in my Instant Pot for at least an hour. Everyone loves my soup. It's the first thing Iearned to make really well. My Momma would actually ask for it when she was sick.
Instead of onion and orzo, I use potatoes and corn along with with celery and carrots and herbs. Just made some turkey soup and turkey salad, save some slice turkey breast to eat with a pot of great northern beans that i also cooked while turkey was in the oven. Yes I broke it 😂 down all today straight from the oven. Did not cook it on thanksgiving day. We had seafood.

The rest of the ingredients made soup look so delicious...minus the two unknown seasonings...since allergies exist. Thank you for sharing.
In the trash. You have to separate the meat from the bones manually after you boil it. The boiling process should loosen up the meat and make it a little easier.

I just made this today. Great recipe and simple too. Mine came out a tad thin so I crumbled up a few pieces of leftover cornbread. Yummy.

That is the very French way to do it and the bones after being browned in the oven give a much deeper richer flavor.

I made my turkey soup this way using matzoh balls instead of rice and noodles. Added a little barley for thickening.
How do you make matzoh balls?

And cook for far longer than 40 min in order to extract all of the goodness & flavor from the bones & cartilage.

IMO only Salt & pepper are required all other spices is optional ... If I added potato, I would skip the orzo .

So what was the point of boiling/simmering the onion,celery,carrots with the carcass then straining it only to replace the onions,celery and carrots
Where did the bones go when you boiled the carcass?
That's why she strained into another pot. You cook the carcass to get the broth and then you can discard the carcass once it's been used.
