The mud will stain the floor. If you polish the concrete before drywall, the floor should be covered with Ram Board during tape, bed, texture, paint, and trim. If you polish after drywall the mechanical abrasion from the concrete grinder will remove any contaminate from the drywall install. The concrete polishing process is more difficult after drywall is installed, so expect to pay more if you choose to polish your floors at this point in the process. Even still, it should be covered during paint and trim.
