IMHO better then Netflix. We canc’d mths ago and cut cable yrs ago. Too much better free on YT, Daily Motion, Acorn etc. Comcast unit costs ~$50 CAD and can be moved to any TV screen. Cheaper then Amazon fire stick/Prime and no temptation to buy things at a click. Husb also found good source to rent/DL books on Kindle (free.) We’re not cheap just trying to add to savings/investments now. We’re a bit boring and crazy that way. 😉😬

I know why the lemons were incredible the year after the freeze! Once upon a time, I dated The Plant Geek. He was getting a PhD in horticultural studies and his dissertation was about using drought and flooding to increase production on tropical fruit. We had a mango tree that NEVER gave us mangos in the ten+ years from when it was planted to when we moved out of the house. We’d loved it and given it the very best of the kitchen scraps. Then we sold that house. We visited it for an open house after it was renovated. The mango tree was COVERED in plump fruit! He explained to me that fruit trees need to be scared to send out their progeny-their fruit. We coddled the tree, but the new owners did not. She got scared and gave forth fruit! Aren’t we all like that? So, that freeze that killed one season’s lemons also forced the tree into survival mode, which is why the next year was incredible. And it’s why commercial growers use flooding and drought to trick fruit bearing plants and trees to increase their output.
I recall reading advice the old farmers almanac when i was a kid (in the 1970s) about ‘beating’ a fruit tree that didnt produce. Taking a board or a downed limb or baseball bat and hitting the tree a few times and allowing the bark to be slightly damaged. Next season, the tree would produce. The advice was sort of ‘what the old folks say. Sounds silly but worth a try!’
Right now I’m dreaming of going to Sorrento, and having day trips to Capri, Positano, and Amalfi. I can’t wait for the world to heal, so that we can travel again! 😔

I like to watch tv when I am sitting at my kitchen table doing prep work. I don’t have the views, the tv is in the other room but I can see it perfectly, I need to turn it up a tad is all. My house is only 953 sq foot, has one bathroom, a single car garage where my washer & dryer are, one bathroom. Nice sized yard with a beautiful garden. It’s been paid for three years now so that’s why we decided to get busy finding our retirement home up north in Florence, Oregon. Quite a adjustment weather wise but very beautiful regardless. Minutes from the beach, woods, lakes, rivers etc.

Agreed! I do give credit to my guy too. He’s not as handy as Carlo but willing to look things up on YT and try. Because of my health he’ll also do all food shopping, errands, cleaning, cooking etc if needed. Not the way I would 😉😬 but pretty good. I fell down basement stairs this summer and shattered my ankle and damaged back/hip and he’s been so good esp w/meno on top 🥵🥶. Nicki’s videos have been a huge help. Husb watches to get some ideas from Carlo! They’re bdays are close! 🧐 We know other men the same and my dad was too. They do exist promise.
@@jmc8076 You are still so lucky. A friend on ours fell down her basement steps and died. Hit her head. I am so careful on steps now. When I see how many steps NIcki goes down my heart jumps. First thing I would do if I lived there would have railings installed on all stairs. Either that or go down them on my bum, then up on my knees, crawling all the way. Would take twice the time to get anywhere. LOL Talk about good exercise.

I'm watching this video again for the third time, working on Tommaso's version of carbonara. The problem for us Americans: nobody does guanciale or pancetta like the Italians of Italy. The fabulous California company Framani does excellent pancetta, but it's not easy to get. And it's not an Italian product. I've yet to find a quanciale in the U.S. that comes anywhere close to what you find in Italy. If anyone knows, please respond. If these Italian products are available for export, only a few suppliers are granted permission, and they don't seem to be among the highest quality available. Total bureaucracy. Good knives, however, can be found in Italy, and given how much cooking Nicki does, I am shocked she does not have one or more great knives, the most important tool in a kitchen next to hands. I wish I could send her a gift to show my appreciation for her hard work on these fabulous videos.

Extending the counter around is a great idea! If you have the room and could make it wide enough for 2 chairs on the end, you wouldn't lose much seating, if any. You could have a closed cabinet under the addition too. I'm loving the drone footage and want to compliment you and Carlo on your photography skills, you share the most beautiful things. For instance, I probably wouldn't have ever seen the inside of a Positano lemon! Thank you so much.

I follow a much beloved Italian American chef here in the states, Lidia bastenich she taught us about the pasta water. I love her, she has wonderful cook books. She has a wonderful salad much like one you showed us, hers was julienned sweet green apple and carrots a orange juice and olive oil,salt and pepper dressing. Delicious! Great on a warm summers day because there is no Mayo to go bad. I can’t take too much Mayo at all, it’s rather gross but it does have its uses I suppose in small doses. That’s just my opinion of course.

I thoroughly enjoyed the cooking segment, your chef was fab. My boyfriend is italian, he cooks his carbonara slightly differently. He uses the whole egg, and whisks it with the cheese in a big separate bowl then adds the cooked pasta amd meat to it in the bowl. I have always made carbonara without cream, but mine ALWAYS, no matter what method, comes out as pasta and scrambled aggs.
Please do more cooking..the recipes are so good..Your videography is stunning..Carlo is a filmaker.. amazingly good at capturing the surreal and timeless beauty of the mountains, sea, and land.. God has created such a masterpiece!

i just bought your cookbook. Oh my gosh, first let me say..so sweet. I can't wait to learn how to make pasta and I love that Elizabeth tells you what pasta is best with what type of dish. I think this confuses most Americans and it made it so simple for this gal to do get it right. I recommend everyone buy this cookbook. When you see Nicki and Carlos cook, those recipes are in this book.
Nice to see Spaghetti Carbonara and the orange and fennel salad. I make it with Mandarins and it's so good, especially if you squish some fruit to mix juice into the dressing.

For the kitchen, here is an idea. Leave the marble as is, but cut the end so it is square. Add a butcher block section to make the U. It would be great for eating, prep, pasta making, etc. and easier!

I'm watching this video again for the third time, working on Tommaso's version of carbonara. The problem for us Americans: nobody does guanciale or pancetta like the Italians of Italy. The fabulous California company Framani does excellent pancetta, but it's not easy to get. And it's not an Italian product. I've yet to find a quanciale in the U.S. that comes anywhere close to what you find in Italy. If anyone knows, please respond. If these Italian products are available for export, only a few suppliers are granted permission, and they don't seem to be among the highest quality available. Total bureaucracy. Good knives, however, can be found in Italy, and given how much cooking Nicki does, I am shocked she does not have one or more great knives, the most important tool in a kitchen next to hands. I wish I could send her a gift to show my appreciation for her hard work on these fabulous videos.
Carlo, you are a master of drone photography. Of course, you have the most beautiful palette from which to choose. Please keep us posted on the kitchen renovation project.

Extending the counter around is a great idea! If you have the room and could make it wide enough for 2 chairs on the end, you wouldn't lose much seating, if any. You could have a closed cabinet under the addition too. I'm loving the drone footage and want to compliment you and Carlo on your photography skills, you share the most beautiful things. For instance, I probably wouldn't have ever seen the inside of a Positano lemon! Thank you so much.

I follow a much beloved Italian American chef here in the states, Lidia bastenich she taught us about the pasta water. I love her, she has wonderful cook books. She has a wonderful salad much like one you showed us, hers was julienned sweet green apple and carrots a orange juice and olive oil,salt and pepper dressing. Delicious! Great on a warm summers day because there is no Mayo to go bad. I can’t take too much Mayo at all, it’s rather gross but it does have its uses I suppose in small doses. That’s just my opinion of course.
The carbonara looks amazing, and the orange and fennel salad so healthy, and with using your own produce it couldn't be fresher!

I thoroughly enjoyed the cooking segment, your chef was fab. My boyfriend is italian, he cooks his carbonara slightly differently. He uses the whole egg, and whisks it with the cheese in a big separate bowl then adds the cooked pasta amd meat to it in the bowl. I have always made carbonara without cream, but mine ALWAYS, no matter what method, comes out as pasta and scrambled aggs.
Please do more cooking..the recipes are so good..Your videography is stunning..Carlo is a filmaker.. amazingly good at capturing the surreal and timeless beauty of the mountains, sea, and land.. God has created such a masterpiece!

i just bought your cookbook. Oh my gosh, first let me say..so sweet. I can't wait to learn how to make pasta and I love that Elizabeth tells you what pasta is best with what type of dish. I think this confuses most Americans and it made it so simple for this gal to do get it right. I recommend everyone buy this cookbook. When you see Nicki and Carlos cook, those recipes are in this book.
Nice to see Spaghetti Carbonara and the orange and fennel salad. I make it with Mandarins and it's so good, especially if you squish some fruit to mix juice into the dressing.

For the kitchen, here is an idea. Leave the marble as is, but cut the end so it is square. Add a butcher block section to make the U. It would be great for eating, prep, pasta making, etc. and easier!

And he didnt chuck a benny when you asked if the worktop could be remodeled . Your chicken that escapes if a male would be called houdini but maybe hudette would be a good name.
