HOW TO CUP COFFEE - Tasting for Beginners and "Coffee Roasters"

  • I truly hope you enjoy this video and get something out of it. The biggest takeaway I want you to leave with is… do not take it so seriously in the beginning and have fun. The rules and procedures deterred me from cupping coffee for a long time as I thought I needed to be more educated and experienced before trying it. What a bunch of “hogwash”. Make it fun. Learn the correct rules but if you need to break them sometimes then go for it. Better to cup and taste coffee than not because some self-created obstacle deters you, aka (kids, time, money). So this is my coffee cupping technique.
    and.... I forgot to mention scoring the coffee… wow... what a complete oversight...

    Below is the SCA cupping rules and info if you want to play by the rules. These are updated as of 7/2/2020.
    "SOURCE":
    SCA Cupping: sca.coffee/research/coffee-st...
    The basic SCA Cupping ratio:
    • The optimum ratio is 8.25 grams of coffee per 150 ml of water
    • Sample should be ground immediately prior to cupping, no more than 15 minutes before infusion with water.
    • Grind particle size should be slightly coarser than typically used for paper filter drip brewing,
    • The water should be freshly drawn and brought to approximately 200º F (93ºC) at the time it is poured onto the ground coffee.
    • The grounds to steep undisturbed for a period of 3-5 minutes before evaluation.
    CUPPING/TASTING:
    Step #1 - Fragrance/Aroma
    o Within 15 minutes after samples have been ground, the dry fragrance of the samples should be evaluated by lifting the lid and sniffing the dry grounds.
    o After infusing with water, the crust is left unbroken for at least 3 minutes but not more than 5 minutes. Breaking of the crust is done by stirring 3 times, then allowing the foam to run down the back of the spoon while gently sniffing.
    Step #2 - Flavor, Aftertaste, Acidity, Body, and Balance
    o When the sample has cooled to 160º F (71º C), in about 8-10 minutes from infusion, evaluation of the liquor should begin. The liquor is aspirated into the mouth in such a way as to cover as much area as possible, especially the tongue and upper palate. Because the retro nasal vapors are at their maximum intensity at these elevated temperatures, Flavor and Aftertaste are rated at this point.
    o As the coffee continues to cool (160º F - 140º F), the Acidity, Body and Balance are rated next. Balance is the cupper's assessment of how well the Flavor, Aftertaste, Acidity, and Body fit together in a synergistic combination.
    o As the coffee continues to cool (160º F - 140º F), the Acidity, Body and Balance are rated next. Balance is the cupper's assessment of how well the Flavor, Aftertaste, Acidity, and Body fit together in a synergistic combination.
    Step #3 - Sweetness, Uniformity, and Cleanliness
    o As the brew approaches room temperature (below 100º F) Sweetness, Uniformity, and Clean Cup are evaluated.
    o Evaluation of the liquor should cease when the sample reaches 70º F (21º C).

      Dude my point exactly. People have made it so upity that many people don’t care to learn more about it. I try to keep it light hearted and fun as possible. Don’t get me wrong I like geeking out over the small details of coffee too but I don’t take it so serious that the joy disappears from it. Thanks for watching my friend! Truly appreciate it.

    Enjoying your video series. Appreciate the time and effort you've put into these!
    I use to watch a Gary Vaynerchuk way back when he just did a Wine tasting. Some of his approaches were pretty applicable. In one training he would set out a table full of items for taste training. Items used as descriptors in flavor notes for wine/coffee tasting. Helps build/train the taster's reference library when moving forward with coffee cupping. Thought that was a novel idea.

    Loved this tutorial! Been drinking coffee since I was a kid (didn't mess me up... probably) and just got into home roasting my own about 2 years ago. Can't believe I didn't start that sooner. Upgraded from a Whirley Pop on my propane camp stove to a Behmor last year and having a blast experimenting with different beans and roast profiles. Now trying to get better at cupping so I know what I'm roasting, or at least sound like I do to impress our friends. Really liked how you explained what you were doing and looking for; very helpful. Biggest tip that I heard somewhere for kind of jumpstarting tasting ability was to drink a really dark, like French Roast, for about a week prior to seriously trying a nuanced tasting. World of difference right there and I was able to pick up on all sort of notes that I completely overlooked before. Keep up the great videos!

      @@RobPirieCedarOtaCoffee Probably common story; love coffee, discovered I could actually take a green coffee bean and turn it into something palatable and maybe even enjoyable, thought to myself "Hey! I could really get into doing this as a business and shift out of my current career in corporate life over the next couple years!", then life happened. I'll be home roasting for the rest of my life, even if I have to use one of my iron skillets over a campfire. That said, I haven't given up on the idea of moving towards testing the waters of moving up to a business. We have some local roasteries in the area that are pretty well established and have a good product, but I still prefer my own beans over theirs. Not sure if it's because I'm roasting according to my own preferences or if it's like growing your own vegetables and hunting your own meat; tastes better because you did it through your own efforts.

    I have a tip for everyone! I went to a local roaster and just told them that i wanted to try cupping, and i asked for some bean samples (I also bought a couple bags that I was interested in most). They gave me 4 samples with around 80-100 grams each. So ask your local roaster! They will probably help you out! So I did my first cupping and I followed your method. I didnt know what I was doing very much, but it was such an interesting experience. I learned how vastly different coffee can smell and taste, and how much I preferred one coffee to another. I wanted to ask if anyone else had trouble discerning tastes between darker roasts. I found that they mostly tasted just smelled/tasted very carbony... So i bought some light roast from another roaster to try tomorrow. Good luck everyone!

    • @RobPirieCedarOtaCoffee
      @RobPirieCedarOtaCoffee  3 роки тому

      This is so cool!! Ya, some roasters are nice and will share knowledge and stuff and if you can find one that’s awesome. I agree darker coffees are harder to cup because after a certain point you roast all of the “notes” that might be detected in the coffee out and replace the notes with carbon, roasty, bitter flavors. The further you get passed second crack the similar all the coffees are going to taste no matter the quality or origin. Light roasts (and even well roasted medium roasts) will have more of the fruity/floral/chocolate notes that people talk about. I rarely roast passed medium unless somebody else is drinking it and wants it that way.
      Super cool they were able to hook you up like that though!

It’s nice as a customer to support someone that is roasting there own coffee as you have control over what is going out to them but cost wise it would be much easier to get it wholesale from a local roaster in the beginning. You wouldn’t have a ton of money sunk in a roaster and all that goes along with it. That way you can use that capital to expand and have if needed in the beginning. Once you get established and money is coming in this possibly get a roaster and add to your offerings. Where you from Travis?

      Great question man! Many of those professional cupped or “Q graders” really taste so much coffee during the day that they spit it out so they don’t overload on caffeine. If you are just doing a few samples then I would not worry about it. If I was cupping 20 samples late in the afternoon I would probably opt to spit it out. Have you completely given up the roasting business now?

      No I’m going to start back. I am trying to move at the moment and pay some things down. I want to have a better chance at growing when I do crank back up. In the meantime I’m doing things like this and building an audience. Going to work on the website and try and get all that type of stuff worked out so I can eventually get to rolling again. If I can consolidate down enough I may see if I can partner and buy a small coffee shop/roastery to operate out of.

    God please get the mic away from the glass you're banging on in your next cupping video. It's anti ASMR in my ears. :(

    What happened to your business?

      My roaster broke and I moved last year so I had to shut it down for a bit. Covid hit and I decided to keep it down until I figured out what was going to happen. I am hoping to get the roastery back up next month. Been a chore getting the building set back up. I have a vlog coming out this week that will explain it all. Thanks for watching my friend!

      It is indeed. My old house was like 10 feet from a major highway and the kids could never really go out. World of difference for them now. Thanks so much for checking out my videos buddy! Means a lot!
