    Ok, guys, one more tip. Use a bucket with lots of holes in it and four stainless bolts sticking out the sides. Put your straining bag in the drilled bucket. Drop the bucket into a bigger bucket , supported by the horizontal bolts. Load the fruit in and the juice will drain out without having to hold the bag! Your back and arms will thank me. Cheers!

    Hi, guys, I couldn’t resist watching this video again! I have a tip for you to help crushing the berries and punching down the must during fermentation. It uses two things you probably already have. One is a round irrigation valve cover. The other is a broomstick. Attach the broomstick to the irrigation cover so the flat side is pointing down. A stainless steel bolt works well. You can finish the broomstick with polyurethane paint if you like. Now you can stand next to your bucket and press down the berries. Same for punching down the fruit cap. After you’re done just disassemble clean and dry. Of course you want to spray down with Starsan next time you use it. Your backs and knees will thank me. We use this tool for making wine in Colorado. Cheers!

      @@levinsylverstone6347 we haven't pursued the license required to sell wine to the public, so we don't have any that we can sell. However, if you're here in town and can make it to one of our farm tours we usually have wine tasting for everyone there. 😉

    Great video Duane and Lori! George L here. Your process is flawless! When you backsweetened did you let it go dry again? Did not hear what your final gravity was at bottling time. Congratulations!

      Glad you enjoyed this one George. When we back sweeten at bottling we don't let them ferment, so they retain some sweetness. Typically we add a yeast inhibitor to ensure we don't have popping corks!

    I’m not a wine guy but I do like a good mildly sweet fruit wine. One the all time best I’ve had was made from apricots and it was absolutely magical. I had to chuckle a little at the end Duane when you snuck in your little tease to Lori about rounding to 100 lbs of mulberries and she said no it’s 98 lbs. I sell windows and doors for a living and our purchasing manager is the same way and it’s always fun to see if she will let any details slide. As a salesman I see many shades of gray, lol, but as our resident “bean counter” she sees only in black and white. We all love her though, she keeps us honest, lol.

      You would probably like this one also as we did make it a bit sweet. Actually, we have apricot from last year that we haven't opened yet, so now I'm hopeful for that one! Oh and funny thing about your story...I'm a Purchasing Manager for an Industrial Supply Company!! To be fair though, I spent most of my life in sales. 😉

    You'll find the lalvin yeast does a superior job great video a elderberry is in the near future here in PA enjoy that mulberry.

      That's good to hear on the yeast. It's a bit slower than the yeasts we've always used in the past, but I can already tell the difference in aroma.

      The longest we've had them age is about 2 years and they did not seem to get any better. Part of that was the quality of the cork (we've upgraded since) and the other is the higher temp we have in our house. We don't have a wine cellar or fridge to keep that temp down, so they "age" very rapidly.

      I (Duane) had a mentor at work that both encouraged and guided us during the first couple of years. Some additional online research to fill in the gaps and now lots of experience over the last 6 years with dozens of batches.
