Big fan Andrew. Grew up eating bread pudding. My buddies thought it was because we were poor. I also make rice pudding with a similar technique as the bread pudding.
Bread pudding out of the oven and fully cooled down will still retain the soft consistency in the insides as if its uncooked even if you baked it properly. But by putting it on the fridge for hours will firm up the insides . I love bread pudding, I dont understand food elitists label it as "peasant food" just because you use stale bread
I can’t remember the name of the red wine related drink he mentioned not sangria the other one. The one he said his father let him try in Europe the one he sort of jokingly said made him an alcoholic.
1:31, with you, Mr. Zimmern, on the custard-bread crumb ratio. Some peoples bread pudding is a disaster, in my opinion. Either bone dry or squashy mush right out of the oven. I like the fruit, but would omit all that rum.

This is the best bread pudding I’ve ever had!! I used bourbon vs rum because of an allergy, came out unbelievably great!!
