  • Cauliflower Salad
    Ingredients
    1. Cauliflower - 1 (cut into medium size florets)
    2. Cherry Tomatoes - 8-9
    3. Red onion - 1 (cut into thin slices)
    4. Green Chilli - 3 (cut into small pieces)
    5. Chopped coriander -1/2 cup
    6. Lemon Juice - 1 tbsp.
    7. Extra-virgin olive oil (1 tbsp.)
    8. White vinegar/Cider Vinegar (1 tbsp.)
    9. Black pepper (1/2 tbsp.)
    10. Salt (as needed)
    Dressing Ingredients
    Olive Oil (1 large spoon.)
    White Vinegar (1 large spoon)
    Fresh black pepper (1/2 tbsp.)

    Method
    1. Set a steamer basket in a large saucepan, fill the pan with water up to but not touching the bottom of the basket. Bring water to a boil over high heat. Add the cauliflower florets, cover and steam 2 minutes or just until tender.
    2. Transfer steamed cauliflower to a large bowl.
    3. Add dressing ingredients (Olive oil, white vinegar, pepper and salt) to the large bowl and mix well
    4. Add red onion, green chilli, cherry tomatoes, sauté well and add steamed cauliflower toss gently to combine.
    5. Put the lemon juice and sauté gently.
    6. Finally, add the coriander leaves and combine with the veggies
    7. Cauliflower salad is ready, enjoy the simple healthy salad.
