    Just made these and holy heck they are delicious. I added some corn and topped it off with cotija cheese, cilantro, avocado, fresh tomatillo green salsa, and a squeeze of lime. So good and I will be making again.

    Rick I got to say as someone who grew up in Mexico I totally approve of that head movement when eating the taco that is how you can point out a real professional

    Made this tonight (August 2021). Being in New Mexico, and it being green chile season, I used fresh, hot Hatch chiles in place of the poblanos (knowing that would be way too mild for us). Was really excellent. You are right how the caramelized onions play such an important role.

    I own your first cook book to this very day!! and since going vegan i have adaped alot of your recipes to my vegan lifestyle! the Cream can be adapted to (raw cashews blened with water and salt-then reduced with salt and pepper-and some nutritional yeast) You are still my favorite chef of all time! Thank you for making an adaptive recipe even if its vegetairan and not vegan. I love GOOD chefs like you being able to adapt.....but ONLY the good chefs like you can! ♥♥♥♥♥♥♥♥♥

    Made these last night (Tuesday!) and they were outstanding. I had no crema or heavy cream so I used abt 1/4c light cream and a spoonful of sour cream which cooked down and thickened quite nicely. Also grated a bit of cotija on top. My family LOVED THEM!

    LOL. I made a cauliflower cream of mushroom soup that's sitting in the fridge. It's almost the same, except without the green chilis. But I have a bunch of Anaheim Chilis. How did UA-cam know to suggest this? I didn't even do a search on youtube! Surveillance!

    OK, now I have to make this, it looks delicious. You always make everything look so simple and approachable! I think a nice addition would be some additional texture in the form of maybe some radish, or purple cabbage or pepitas. Maybe pickled veg for some acid. Definitely making this the next time I do tacos!

    How would you execute this in a restaurant setting? Would you roast the cauliflower and then store them for later use? If so how long do the last and how do you reheat ?

    The metal spoon on the nonstick pan hurt my soul. Still trying this recipe tho (minus the teflon scrapings) 😋

      If you watch closely, the spoon only touches the food itself. He switched to the silicone one when had to touch the pan.

    This is more of a guiso that would be eaten with tortillas.
    I've never been able to figure out Mexican crema. It's nice and runny, unlike sour cream. It's not as sour. I imagine cream fraiche is a little sweet, a little fluffier than heavy cream. They may be interchangeable for this, but not for making ice cream. We tried making ice cream with Mexican cream (in Mexico) and it never worked. We had to get heavy cream from HEB.

    Hi Rick, I was looking for an enchilada recipe but maybe that’s more Tex mex. Anyway I see often the UA-camr cook will dredge each tortilla in warm oil to make them easy to roll. Is that how you do it? I have in the past warmed them in the microwave between damp paper towels. They do sometimes split or crack a bit. Was just wondering your thoughts. PS. I chuckle a bit when I see the Julia Child show that you did with her. So young 😊

    You've sure got that right, Rick. After awful over-boiled cauliflower so many of us had in our childhood, it took some convincing to get people to try cauliflower again. Your creamy cauliflower in this video sure look great! I get my guests to embrace cauliflower with my Popcorn Cauliflower--a great party finger food even kids like! It's oven-baked and sure converts a many cauliflower skeptics. I haven't done a video of it yet, but the recipe is requested often, so it's on my food site, enlightnedcook.com

      Note for you: Cauliflower helps to prevent the dreadful disease of cancer!!!!! So nothing to lose by eating it a little bit more & raw (washed) is the best form of it!!!
      You can make this recipe any way you want.....with whatever ingred.
      you prefer, just add meat to it... (:

    Cauliflower is great, but tacos require cows and pigs. Try again.
