Chick-fil-A Spicy Chicken Sandwich - Is this the best chicken sandwich recipe?

- Chick-fil-A Spicy Chicken Sandwich
Ingredients:
- 2 chicken breasts, sliced in half
- 2 1/4 tsp ground white pepper
- 5 1/2 tsp paprika
- 3 1/2 tsp cayenne pepper
- 2 1/2 tsp mustard powder
- 3 tsp garlic powder
- 2 tbsp salt
- 1 tsp MSG
- 1 1/4 tsp caster sugar
- 140g plain flour (all-purpose flour)
- 1/2 tsp black pepper
- 150ml milk
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp yellow mustard
- 1/2 tbsp honey
- 1 tsp smoked paprika
- 1 tbsp BBQ sauce
- 4 potato buns
- 1 tbsp butter
- 16 slices dill pickle
- peanut oil for frying
Method:
1. To prepare the brine, in a large bowl, mix 1L of water with 1 tsp ground white pepper, 2 tsp paprika, 1 tsp cayenne pepper, 1 tsp mustard powder, 2 tsp garlic powder, and 1 tbsp salt until fully dissolved. Add the chicken breasts, cover, and refrigerate for 8-12 hours.
2. Make the sauce by combining the mayonnaise, Dijon mustard, yellow mustard, honey, smoked paprika, BBQ sauce, and 1 tsp garlic powder. Mix well and refrigerate until needed.
3. Prepare the seasoning in a small bowl, mix together 1/2 tsp salt, 1/4 tsp MSG, 1/4 tsp caster sugar, 2 tsp paprika, 1 tsp white pepper, 1 1/2 tsp cayenne, and 1/2 tsp mustard powder.
4. Prepare the flour dredge in another bowl, combine 140g plain flour, 1 tbsp caster sugar, 1/2 tsp salt, 1/2 tsp MSG, 1 tsp paprika, 1 tsp white pepper, 1 tsp cayenne, 1 tsp mustard powder, and 1/2 tsp coarse ground black pepper.
5. Remove the chicken from the brine, pat dry, and season both sides with the seasoning mix. Dip each piece first into the milk, then into the flour dredge. Heat peanut oil to 180°C and fry the chicken for 7-8 minutes or until golden brown and fully cooked. Once removed from the oil, season again with the seasoning mix.
6. Toast the potato buns with butter. To assemble, place pickles on the bottom bun, add the fried chicken, and optionally apply the sauce directly on the chicken or serve it on the side.

I used to work at CFA, and long story short, the kitchen doesn't do anything with condiments. It's very efficient to leave that up to the customers, and you get less complaints about the over or under use of sauce.
That makes sense.
But it doesn't taste the same, if it's not put on right after it's made! Dang Chick-fil-A
I thought the complaints were for the fake chicken used thats grown in labs.

Actually chef Andy the main reason why they don't put the sauce inside the chicken sandwich is to prevent it from getting soggy so instead they let you dip the sauce on to the chicken sandwich or dip the chicken sandwich into the sauce bowl cheers mate😊

Every time I want to fry something I just remember how much excess oil I’ll have to throw out and how many dishes I’ll need to clean (especially for chicken). But damn that looks good! 😮
You don't need to throw out the oil afterwards - just strain it into a container and you can reuse it several times
Uh, just re-use the oil? You probably can keep it for 1-2 week in a well-closed container. I dont get it when people say they gotta "throw out" the oil as if the idea of keeping it for other uses like stir-frying or frying other things later is that gross.
Oh also if its still too much leftover oil, use less oil and fry half-submerged instead of fully submerged. A bit harder to do, but saves good amount of oil.
You know you can use cooking oil a few times, right? Just strain it and keep it in a good container and you're good.
You're just wasting oil if you do it like that.
How often do you think they change fry oil at fast food joints or restaurants? Try 1x a week if you are lucky (thats 500 orders of fries). 1x a month is more like it. They just add to the old oil.
Get a wok. Trust me you’ll start finding stuff to do w it. I fry in mine all the time, keeps the seasoning perfect

More like 8. The lines look like the world’s longest but they have 4 lanes and very efficient employees and you’re in & out in 8 minutes even if 4 lanes of drive-thru traffic wraps around the building and extends well into the parking lot.

As a picky eater when I was younger, it’s perfect. You can add your sauce to your liking but they don’t have to modify it to everyone’s preference.

The filet definitely looks better, but I love how the bun steams in the foil pouch. I'd wrap this bad boy and let it sit on the counter for about 5 minutes.

@@gurudeshmukh8780 It's just how most chicken chains do it. Pressure fried chicken. Also I think chick-fil-a is more watery than moist. But I prefer chicken thighs in general to breast meat.
I promise you, homemade chic fil a is much better than the actual stuff. No waiting in overhyped long lines and none of the BS that comes with the company. It really is the pickle brine that makes it. Plus, homemade is far healthier.
They don't actually pre-marinate. It just has a different coating before going into the fryer. They also don't put pickle juice in the chicken they just use pickles that are still in pickle juice so it tastes like its incorporated more than just on the exterior. They also don't add sauces because it slows down the kitchen to add sauces, & they don't get them wrong over a sauce this way. Plus, you get to add as much as you like of course
If you're someone who has issues with their hands or are unable to do it of course the cashiers or a front of house worker would happily help with saucing your sandwich but really its just a timing thing. Every single chic-fil-a prides themselves on their quick drive thru times. They work as quickly & efficiently as they possibly can to get as many through as possible during rushes. They're also one of the only fast food places that has competitions hosted by managers or even owners. They will challenge their employees to cut down from previous times or see how many they can get through & if theres room for an individual friendly wagering, they encourage that with some sort of "prize" for the winner. Fun fact, they also hire as young as 13. And for minors in high school they got away with paying them $4.25/hr when i worked at one in 2012. I was a minor but had been emancipated, dropped out & gotten my diploma early & hired on at 16 but made $7.25 because i was a full time employee. Really surprised me they paid them so little.
It’s not called a burger in the US. But yes it’s amazing and they are so friendly.

I'm 100% on board with having a dipping sauce for a burger: it doesn't make the bun soggy, you get to control the ratio, and let's face it food it just a vehicle for sauce so let's give it a starring role
