- This smoked white chicken chili was a fantastic recipe for the pellet grill or smoker! We started by smoking a whole chicken and the vegetables on the pellet grill first to add extra smoke flavor. Then, we made a homemade chicken stock out of the smoked chicken bones. And finally, we made a delicious pot of white chicken chili on the pellet grill!

I am the Pitmaster at Whole Hog Cafe in Fayetteville, AR. we are a tradional Memphis style BBQ in the heart if the Ozarks. I serve a smoker brisket chili but the rest of the staff has been requesting White Chili from me which I do not make very often but I am going to make your version or at least a tweaked heavly influenced version of this recipe.

Saw this video this morning and had to try it. Problem is, my smoker is put away for construction on our pool/patio/outdoor kitchen/yard. So ours wasn’t smoked. I used a Sam’s club rotisserie chicken and crisped up the skin on an indoor pancake griddle. Otherwise it pretty closely followed what you did, except I used two cans of mild green chilis instead of fresh, a whole cube of cream cheese and just 2 cans of beans. Turned out fantastic! Wifey loved it!

I really like your version of this style chili, which is so underated. One sure thing to try next time is crumble up some lime or chili lime tortilla chips. Thats my Texas spin...

Wife makes turkey soup with the stock of boiled up smoked turkey bones and left over turkey meat......way better then store bought stock.

So is there a replacement for beans? I know it sounds sacrilegious, but my wife has issues with them. And as a side note, LOVE the new channel! And once again, you two are forcing me to spend more money and buy a smoker...

This is right up my alley. One thing I would add for us rookies is how long it takes to smoke the meat. I understand temping it. Just helps give an idea how long we’ll be smoking. 👍
agreed...200 percent...one problem I have found in the peller world is the inconsistency with each smoker...AND when the dial says 275...and inside is only 225 to 250...and where the meat is actually on the smoker for different temps....extremely hard to gauge..
