The borders served a purpose. They were essentially black bars that covered the sides as the images buffer into view. If you play these old games with roms using widescreen enabled in the emulators, you'll see what I mean. The edges are often filled with half drawn images. Some of those old Rare games that had widescreen modes in the options didn't have this problem. DK64 was another one that can run without the black bars.
banko tooie was originally made for wide-screen compatibility but no tvs back then supported wide-screen, and no, it's not the xbox version, it's the n64 version

It said "Cheers to 3 years of Nintendo Switch Online + Expansion Pack" and it said at the bottom "What excitement will bring next year for Nintendo Switch Online + Expansion Pack? Tune in to find out" It seems clearly Nintendo is hinting there will be something added to Nintendo Switch Online like say Nintendo GameCube or Nintendo DS games. Maybe that's what those 10,000 players are going to find out when they test it in the program
GameCube games are fairly likely, but I doubt DS a little bit. A lot of DS titles use the touch controls, all of them have some use for both screens even if the primary action is only on one of them, and I feel it would be hard to make that work properly on the Switch. Maybe doable, but it did sometimes feel a bit awkward even on the Wii U's DS VC titles.

Problem with this though is that GC games are much bigger than previous generations.
