I’ve made this recipe many times in the oven, but I finally broke down and bought an air fryer and will make this recipe tonight as our first try at the air fryer.
Mayo is an excellent choice for coating foods you want to bread and fry, either conventionally or in an oven. Mayo is egg yolks and oil therefore it is much like a standard egg wash except with the addition of the oil. Here's a tip. Add a little dab of dijon mustard to the mayo, or even to your egg wash if you choose that method, before you coat the chicken. It will strengthen the cohesiveness of the wash or mayo and It will add a nice flavor to the overall result. Don't overdo it, you don't actually want to taste the mustard.

this is so brilliant an idea, mayo instead of messy egg wash! just sent it vid to my son he'd luv it(Im a vegan). he used my homemade fancy breadcrumb(made with oil, garlic, spices) so all he needs is mayo and crumbs. THX alot!

It does kind of look like its been fried by oil but its not, thats the best part!! So if someone likes eating fried chicken they can use this recipe! tricking themselves to eat healthy.
I think it's just the parmesan coat which keeps the chicken breast soft and tender. In other receips the chicken breasts are put in joghurt, buttermilk or kefir for at least one hour to prepare it for frying e.g. indian tandoori chicken. I'll get my airfryer in a few days and I am looking forward to test your recipe :)
My step grandmother used to put mayo on her fried chicken, been decades since I had it. I used to be anti mayo till that day. It was as good or better then kfc.

The next decision was totally made sober 😂😂😂 KROQ radio station in socal hosted the microbrew and they had a booth. The announced a context for tickets to see the YEAH YEAH YEAHS and of course I was front and center. They picked me and a gent. They brought out 2 plates with 3 Twinkies per plate. My initial thought. Damn, those are some fat Twinkies. FORESHADOW!!! The hosts said first one to finish wins. They started the countdown. 1! 2! Ohhh wait. No hands. Ok no probs. 1! 2! Ohhhhhhhhh wait. The Twinkies are filled with mayo. THE HORROR!!! I still went on. 1! 2! 3! We go!!! I was losing😂😂😂 but half way. I dug deep, finished first and slammed the plate onto the table. 😂😂😂😂😂 The concert was ok😂😂😂😂

I always marinade my chicken in baggie either mayonnaise then in fridge couple hours Delicious and tender

The mayo keeps it moist also, I add to meatballs instead of egg, ideal when making burgers/patties too.

Mayo is basically an egg and oil emulsion (ik store bought ones are different, but they are similar in principle)
