Instant Pot Beef Stew with a Secret Ingredient (The ULTIMATE Comfort Food!)

Recipe:
1 teaspoon oil
1 pound stew meat cut into 1 inch chunks
1 small onion minced
2 cloves garlic minced
1/2 cup dry red wine or beef stock
3 cups beef stock see note
1 cup crushed tomatoes
1 tablespoon horseradish
1/2 tablespoon Worcestershire sauce
3 cups baby potatoes or potatoes cut into 1 inch cubes
2 cups carrots cut into 1 inch chunks
1 bay leaf
1 teaspoon dried thyme or 2 fresh sprigs
salt and pepper
1 tablespoon corn starch see note
3 tablespoons water
INSTRUCTIONS
Turn the Instant Pot to Saute and allow to heat up. Once Instant Pot is heated, add in oil.
Season beef on all sides liberally with salt and pepper.
Add seasoned beef and chopped onion to pressure cooker and let cook on all sides until beef is browned on all sides. Once meat is nearly fully browned, adds in the minced garlic and saute for 1 minute longer, being careful to not burn the garlic.
Add in red wine and scrape up any browned bits of liquid on bottom of pressure cooker. Turn the Instant Pot off.
Add in beef stock,potatoes, carrots, crushed tomatoes, horseradish, Worcestershire sauce, garlic, bay leaf, fresh thyme, and a pinch of salt. Stir to incorporate sauce.
Place lid on instant pot and be sure vent knob is closed to seal in pressure.
Set to manual pressure for 30 minutes. To do this, hit pressure cook or manual and adjust cook time using +/- buttons. If you have the Ultra model, hit ultra and then adjust to high pressure and then set cook time to 30 minutes.
Once cook time has elapsed, allow pressure cooker to release pressure naturally or for AT LEAST 15 minutes.
Once pressure has been released, open up pressure cooker, remove bay leaf and thyme sprigs. Hit cancel on pressure cooker (to turn off keep warm function) and turn back to saute.
Whisk together the water and cornstarch and then whisk into beef stew. Allow to bubble and thicken to desired consistency. Taste and season with salt if needed. - Навчання та стиль
My wife always makes beef stew, it is one of her go to recipes. I decided to make this while she was at work. I didn't have the horseradish or red wine but made it exactly by the rest of the recipe. The wife loved it. She even admitted it was better than hers. Yes!!!! I win.

I just made this (without the wine & horseradish as I didn't have any in on hand) and it was still awesome. My first instant pot meal is a success. Thank you. I will add the other ingredients next time. It was also good to know I didn't have to brown the meat first and it was so tender and delicious.

The horseradish does not overpower, just adds some flavor and tenderizes the meat. Enjoy!
I am on a quest for the best beef stew recipe. I made this last night in my pressure cooker and this is the best Beef Stew recipe that I have tried so far. Julia Child's Boef Bourginon was just ok but way too rich and way too gassy! Your Beef Stew is almost perfect! I made it exactly the way you suggested and I had no gas last night... woop woop! Hi There bought a little over 5 lbs of meat for making beef stew. Would I increase the cooking time to 45 - 60 mins?
The cooking time will remain the same, since the beef is cubed. You will clearly want to add additional broth and seasonings and remember not to fill your inner pot more than 2/3rd of the way full. Enjoy!
Any thoughts on mushrooms?
I think they would be delicious! I would use creminior baby bella, but button mushrooms would work as well. Just add with carrots, potatoes, etc.

I have a question about the amount of liquid to use. I’m going to make this recipe with 3 lbs of stew meat, 5 cups potatoes and 4 cups carrots. How much red wine and beef stock should I use? I have an 8 quart Instapot. Thank you!
Hi Sarah, I would recommend using 5-6 cups of broth with 1 cup or red wine, and keep the cooking time the same. Enjoy.

Hi Sandra! I test all my recipes in an 8 and 6 quart instant pot.
How much horseradish would 8nuse?
I use about 1 tablespoon.
I’ll try this in a couple days so I’ll probably give you at least 7 views on this video each time I make this I can tell it’s a good recipe

what's the purpose of sataying the beef first, instead of cooking everything together?
It helps the beef develop a bit more flavor and texture, but feel free to skip that step to save time

How long for 2.75 pounds of meat? 30 minutes or a little longer? Cooking this tonight!!!!
The cook time will remain the same regardless of how much meat you use--it will just take a bit longer to come to pressure. Enjoy!
