I miss Karaguer. I lived in Miyazaki and there was a place only opened at night 7 or later. Their karager was amazing and if you drop some of the fat on the cement the stains stayed forever. So probably not healthy but great taste.
I don't like Korean fried chicken, the sauce is good but it's all about the sauce, the chicken is mid and no crunch at all. But this Karaage actually retains the crunch, would love to try it

OKAY. So working with a Japanese chef, and the trying a bunch of Karaage from other chefs since, I realised that I was expecting too much from Karaage; It is just about simplicity and crunch. Western fried chicken is about a thick coating with flour and spices, but Japanese chicken uses more corn starch (or potato starch? I think it is better but I don't know what they use in Japan). It doesn't brown as much, and it is usually done with the dark meat. But in my experience it is all about the sauces. A really great Japanese cafe near me with a chef from Japan serves it covered with a simple miso vinegarette and it so damn good. It is a different approach to fried chicken, so just don't expect the same thing we are used to.
