How to Make Mushroom Risotto

  • Mushroom risotto doesn't have to be complicated. If you can stir, you can make a delicious mushroom risotto that the whole family will love!

    ✅Ingredients
    • 6 cups chicken broth
    • 3 tablespoons olive oil, divided use
    • 2 pounds mushrooms, thinly sliced
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 medium shallots, minced (about 1/2 cup)
    • 1 1/2 cups arborio rice
    • 4 tablespoons butter
    • 1/3 cup parmesan cheese freshly grated
    ✅Instructions

    1️⃣ 0:00:37 - In a medium saucepan, heat the chicken broth to a simmer.
    2️⃣ 00:00:18 - Meanwhile, in a large skillet, heat 1 tablespoon of olive oil over high heat. Add in the mushrooms, season with salt and pepper, and saute until nicely browned, 3-4 minutes. Remove them from the pan and set them aside for now.
    3️⃣ 00:00:52 - In the same skillet heat 2 tablespoons of olive oil. Saute the shallots for a minute or two and then add in the rice. Toast the rice in the olive oil for about 3 to 4 minutes until golden.
    4️⃣ 00:01:34 - Pour in 1 cup of the simmering chicken broth in with the rice, stirring constantly. Once the rice absorbs all of the liquid, reduce the heat to medium and continue adding in broth 1/2 cup at a time until all 6 cups of chicken broth have been added in and absorbed. Stirring consistently will help the rice cook evenly. It should take about 30 minutes to add the entire 6 cups of chicken broth.
    5️⃣ 0:02:35 - Once all the liquid has been used, stir in the mushrooms, the butter, and the parmesan. Taste, and salt and pepper to taste.

    Rachel. I work in the First Class cabin on an airplane. The other day we served mushroom Risotto. It smelled sooo good. I made your recipe at home today and it was even better than at work. Yum yum yum.

      Risotto is a main because it’s very rich. A nice vinaigrette salad goes great on the side though.

    I have GI issues and I doesn't allow me to eat rice, do you think you could make something similar with orzo pasta? It looks so good I'd love to try it in some form

      What about barley? I've made a risotto with barley instead of rice and it turned out really good. Barley has a lower GI than rice. Barley 25, rice about 55. You make it the same way. I just wash my barley in cold running water first.

      You could try Vegetable stock, but it will change the flavor a little bit

    so we boil rice first before making risotto??? I follow the instructions step by step and my rice is still hard after 40 minutes.

      Branden I’ve never seen it made with cream. I’ve cooked it and it’s seems the technique and the cheese(cheese😀) make it super creamy. It’s a labor of love. For sure!

      A few years ago I helped a chef on his day off and I remember adding cream to the risotto, but I honestly can't remember the recipe at all, so when I saw this video I thought it would jog my memory :)

    I've always read that you should use a wooden spoon to cook risotto. Is this not correct? Does it really not matter?

    People say this is hard to make. What type of pan is that? Stainless Steel? I know that certain types of pans heat more quickly or hold heat better than others. I am scared to do it in a ceramic pan because the thing gets so hot!

    I have only had resotto a couple of times and each time I was put off by sloppy rice. Somthing you said in the presentation about the rice releasing its starch and getting creamy is something I would want to avoid. Similarly the quantity of Butter added at the end.
    I know it would not then qualify as a Risotto but could I not substitute washed Basmati and hold back a tad on the butter? There are many Risotto recipes out there and they all look good but the though of sloppy rice puts me off. For Pure interest sake I am not keen on Chicken and rice (of any kind)(I threw about four portions away once, couldn't face them) or masses of cheese unless it is a Lasgne or an omlette. I LOVE cheese btw, I have never met a cheese that I ddn't.
    Oh! BTW nice video don't have to love the food but the presentation was very good. Thanks You.

      It would still be really good but it wouldn't be risotto. Just mushrooms and rice. But you wouldn't need to add the liquid a half cup at a time. Just cook the rice in the liquid as you normally would. It sounds like you don't like risotto anyway.

      I don't know that I've ever purchased the sawdust parmesan cheese. I only use freshly grated.

    First you pronounced Arborio wrong. Second - it takes 20-22 minutes for the rice to cook. This will turn out gummy in consistency

      That's okay. I don't feel the need to try and fake an Italian accent. If you've watched for a while you'd know that I am terrible at pronunciations. Don't try and hide that at all. It is what it is. You are welcome to cook the rice for 20-22 minutes, but it won't be cooked through.
