Jam & Coconut Cake | Simple One Bowl Traybake Recipe | Soft Sponge

  • Learn how to make this simple Jam & Coconut sponge traybake using just one bowl.
    This soft and fluffy cake covered with jam and a sprinkling of coconut is perfect to have as a treat.
    *I used a 30x20cm tray and this recipe made about 20 slices*

    Ingredients:
    250g butter
    250g sugar
    4 eggs
    250g self raising flour
    2 tbsp milk
    2 tsp of vanilla essence
    100-150g jam
    Generous sprinkle of Desiccated Coconut
    Method:
    Preheat the oven to 180c/350f/Gas mark 4 (Fan)
    Melt butter in the microwave and add sugar, whisk together.
    Add eggs one by one and mix.
    Gently add flour and mix together with fork or spatula.
    Add a dash of milk and then the vanilla essence
    Line a tray with a baking sheet or grease it
    Bake for 20-30 minutes/ Until cooked. If you don't have a fan assisted oven you may need to bake for longer.
    Allow to cool in the tray for 15 minutes then top the sponge with the jam and coconut.

    this is by far the best coconut jam cake ever ..ive made it like 3 times in the last 2 weeks ...making another today .. my partner he absolutely loves it ...i do too but i dont get the luxury of eating what i want n it not goin to my hips ha ha so i only had a piece or 2 ...my mum n dad adored it too they agreed best recipe ever .. so big thankyou ...new sub of course with a cracking cake like that hee hee 🐝🐝

      Can i add ready rolled shortcrust pastry at the bottom, then spread jam and top it with the sponge batter. Will that work?

    I subbed the butter for equal parts vegetable oil as my partner is lactose intolerant. Came out pretty good, cake was moist, not too sweet, and had a nice crust on the edges. Only thing I'd recommend is doubling the amount of jam and coconut on top for a thicker layer (it's the best part after all lol)

      Did you do the oil as 250g? Or did you measure it as ml?

      @@soukxo3098 250ml (approx. 230g) because more than 1 cup of oil seems excessive.

      Of course you can, keep it in airtight container.

      Roughly 30cm x 20cm ( it's just a regular oven baking tray that I use)

      You can use either. If you use unsalted then sprinkle some salt into your batter.

      You can add 1 tsp if you wish. I used self raising flour so it was not required.

      I've not used baking powder in this recipe because I've used baking flour which rises by itself. You could use baking powder & experiment. It wouldn't do any harm.

    Sorry to ask but why no milk in you recipe on ingredients and also mine seems runner than yours without milk . It was 250grams of flour right. 🤫🤔😌

      Not if you use self raising flour. If you're using plain flour then you'll need baking powder.

    Nice recipe but definitely takes longer then 15/20 mn. It’s a big cake I’d say 35/40 mn easy 👍

      My oven typically takes 20 minutes 😊 but you're right ! Depends on the oven as it certainly is a big cake 😁
