OLD SCHOOL Jam & Coconut Sponge British Classic
Вставка
- Опубліковано 24 січ 2024
- Jam and Coconut Sponge, often considered a classic British school dinner dessert, is a beloved and nostalgic treat for many who grew up in the UK. This dessert features a unique combination of flavours and textures, making it a distinctive and memorable dish.
The foundation of this dessert is a light and airy sponge cake known for its moist and tender crumb. This base typically uses standard cake ingredients like flour, eggs, sugar, and butter. The sponge cake provides a neutral yet buttery canvas for the flavors of jam and coconut.
A generous layer of jam, usually raspberry or strawberry, is spread over the cooled sponge cake. This adds a sweet and slightly tart contrast to the mild sponge. The jam infuses the cake with fruity flavor and adds a sticky, gooey texture that is characteristic of this dessert.
The top of the jam-slathered cake is then sprinkled with desiccated coconut. This coconut topping gives the dessert its distinctive look and adds a delightful crunch. The coconut's mild, nutty flavour complements the sweet jam and balances the overall sweetness of the dish.
The Jam and Coconut Sponge is a quintessentially British dessert cherished for its simple yet delightful combination of sponge, jam, and coconut. It is a testament to the comforting and straightforward desserts common in school canteens and popular in home baking.

Wow Rik i am catching up again on your videos and see you're still on the good old fashioned recipes journey which i am thoroughly enjoying. They take me back to good old days & memories.
I also love that you are doing many traditional bakes from up & down the UK which like myself many must love.
I love everything you do, love how you present it and love how you also enjoy eating them too
What a brilliant baker/chef/cook/man you are

@@BackyardChef jam an coconut sponge
Takes me back to my school days...there was never enough custard. 🤣
Yes. I remember that. Best, Rik
You are a bad man.... Memories flood back to simpler times, however, now as a diabetic, I can only admire and of course get the kids involved and enjoying this timeless treat. Many thanks for the memories and the pain of watching you have my slice.
You are welcome. Thank you. Best, Rik
Cant you use diabetic sugar & jam.?
My mom used to make this when I was a kid. Mom used to say it was something her aunt used to make all the time when she was young. My mom's side of the family was from Scotland and Ireland. She was 2nd generation American. Watching some of these videos reminds me of watching my mom cooking. She always said New England traditions. I think it is actually a British, Scottish, and Irish tradition. I love watching your videos❤
Thank you. Best, Rik
It was very rare that I managed a pudding at primary school because you had to eat all your dinner first but I don't eat veg. The only time I got pudding was when we had fish n chips or mince & dumplings! I remember this one and also rice pudding with jam in the middle. I still don't eat veg and I'm alive to tell the tale!
Thanks for sharing - mince and dumplings - yes please. Best, Rik
Wow one of my favourite school puddings and cornflake tart, both with custard. Yummy yummy 😀
Thank you. Easy one this one - I love it. Best, Rik
Gosh, I used to love this back in the early 60s.
Me too and I still do. Best, Rik
WOW!..this immediately took me back to my school days in the 70's.
And me! Best, Rik
This takes me back 50 years Rik.....
It was another one of my favourites....😋

I used to warm the jam before spreading, but I remember this was always in great demand. Not at school, but in the hospital.
Its so easy and quick to make a fantastic dessert. Best, Rik
"Bog standard" 🤣 old recipes old sayings, thanks Rik
Classic mate. I've enjoyed eating this today. Best, Rik
Oh, my giddy aunt. That looks fantastic. It DOES take me back. I have to try this. P.S. Burns' night. On the menu: Haggis, creamed mashed tatties and mashed turnip. Homemade clootie dumpling and custard. Can't wait.
Sounds like you have a great menu. I was going to make Haggis - however getting hold of ingredients caused me a problem. Enjoy. Best, Rik
I would love to know your take on making your own, but I'm being a cheapskate and going for the price reductions tomorrow.
I'm sorry to disappoint. I get my haggis delivered from a Scottish Butcher. I'm not brave enough to make my own😮
I'm loving these old schools pudding recipes, takes me right back. Half of our school puddings came topped with either chocolate custard or a dollop of a super sweet whipped cream substitute. Thanks for the recipe, it looks amazing!
You are very welcome. Best, Rik
Jam and coconut sponge was always my favourite pudding at school. Thanks for this memory Rik.

Definitely would listen to an audiobook read by you.
Wow! Thank you. Best, Rik
I loved school dinners, especially the puddings. My late aunty used to make me an upside down pear cake, it would be great if you could do one of those. Best wishes.
Great idea!! Best, Rik
Made gluten free version at the weekend for my grandchildren and halved the sugar. It was delicious, clean plates all round and all gone, no left overs!! Thank you, will cook again.

Rik, this reminds me of my favorite Hostess treat: the Raspberry Zinger! Oh my goodness, it looks soooo good!!! I'm making it for the next bring a dish meal I go to. This has to be shared! Thank you once again for bringing us amazing dishes!! 🥰🥰🥰
Thank you. Best, Rik
My favourite from school day 😊
Thank you. Best, Rik
Oh my goodness what a lovely slice of nostalgia 😍 beautiful cake I could taste it through the screen mmmmm.
😋Thank you. Best, Rik
Thanks Rik! I made this! For our US friends. Our traditional 9”x13” pans are about half as big in surface area so just add an extra half of all ingredients.
It took closer to 30 mins to be ready but came out great. And in the US castor sugar is just ‘ver fine’ granulated sugar.
Well done! Best, Rik
My to do list is so long, omg. I have so much to look(or better yet taste) for❤ thank you👋🇫🇮💕
Thank you! Best, Rik
I wish we’d had your portion sizes at school, yum. I love how you tuck in.
Thank you. I think my portion sizes are taking a toll around my middle. Best, Rik
The only thing I can think of that comes close to this is a snack cake called Zingers. I can tell you, we never had treats like this in our school lunches. Thanks for another wonderful recipe Rik ❤❤❤

This looks absolutely amazing, and another "to make" on my list. I love that you are doing some "old school dinner" recipes at the moment, but i would love to see some easy Thai recipes of desserts that we could try (if we would be able to get the ingredients in UK).
Keep up the great work. I enjoy watching what you make, regardless if i would make and eat them myself.
Glad you like them! I will stuff some different recipes in amongst. Thanks Jamie. Best, Rik

I have a request, Rik. Would you mind making a school pudding playlist? (I need to make sure I’ve watched every last video 😂!)
Coming soon! Best, Rik
In being American I need it to be authentic and sometimes vegan. But it still looks like a good lunch tray.
No problem. Thanks. Best, Rik
I have the most amazing gingerbread recipe with added coconut. Sooo moreish. Never had it with custard - like another old school pud. Would you like the recipe to try Rik ?

Someone mentioned below in the cmments " cornflake tart" oh that brings back memories, have you ever made it Rik? I had a look through your videos but didnt find anything ❤
Yes I have, here you go ua-cam.com/video/Pg0YF-Dj_nU/v-deo.html Best, Rik
Hi Rik made this twice now and it's stunning, when you cook it do you use the bake setting or the air fry?
Hi, Wayne. This pud is cooked on toast 160c. I use both - depending on what I'm cooking. When this oven first came out - I suggested to the company that the low fan setting to be included in the toast setting it would revolutionise this. Making cooking at temperatures with no blasting fan. It would be good to have a low fan at say 170c in the oven. For an example - that would make cooking Yorkshire puddings at 230c - low fan would help them rise, just like a normal oven instead of rising all mis-shaped. Best, Rik
Yumm
Thank you. Best, Rik
@@BackyardChef Thank you for another classic, honest recipe. All too common I find is unnecessary "modernisation" for the sake of it - simple and classic is the best in my opinion 👌
Yes no cons with my cooking. Thanks. Best, Rik@@christine-t
Looks delicious and brings back a lot of good memories of eating this. Perhaps air frying at 170C for about 15 minutes would be worth trying next time
Could be or 150 for 20 mins - keeps it moist. Will have a go. Best, Rik
@@BackyardChef This is the problem with air fryers, timings of many tradition recipes aren't really known and it's down to people like yourself to find the optimum cooking temperature and cooking times. Keep up the great videos and amazing food
Agreed! We are all still working it out. It's contributing to some excellent food, though. Different from a basket air fryer, too. Best, Rik@@GenialHarryGrout
Yum. My favourite cake used to be Madeleines (similar to this recipe), why are they no longer in the cake shops?
No idea. Everything goes out of fashion - that's why we have to keep making. Best, Rik
