    - 1 tsp vanilla extract

    Oven 180 c - 360 f 20 mins
    Air fryer 160 c - 320 f 20 mins

    My mom used to make this when I was a kid. Mom used to say it was something her aunt used to make all the time when she was young. My mom's side of the family was from Scotland and Ireland. She was 2nd generation American. Watching some of these videos reminds me of watching my mom cooking. She always said New England traditions. I think it is actually a British, Scottish, and Irish tradition. I love watching your videos❤

    It was very rare that I managed a pudding at primary school because you had to eat all your dinner first but I don't eat veg. The only time I got pudding was when we had fish n chips or mince & dumplings! I remember this one and also rice pudding with jam in the middle. I still don't eat veg and I'm alive to tell the tale!

    Oh, my giddy aunt. That looks fantastic. It DOES take me back. I have to try this. P.S. Burns' night. On the menu: Haggis, creamed mashed tatties and mashed turnip. Homemade clootie dumpling and custard. Can't wait.

    I'm loving these old schools pudding recipes, takes me right back. Half of our school puddings came topped with either chocolate custard or a dollop of a super sweet whipped cream substitute. Thanks for the recipe, it looks amazing!

    I loved school dinners, especially the puddings. My late aunty used to make me an upside down pear cake, it would be great if you could do one of those. Best wishes.

    Made gluten free version at the weekend for my grandchildren and halved the sugar. It was delicious, clean plates all round and all gone, no left overs!! Thank you, will cook again.

    Here in the US we had a Hostess snack cake called "tiger tail". It was a Twinkie with raspberry jam stripes covered in desiccated coconut! Thank you, Rik, for another delicious looking recipe.

    Thanks Rik! I made this! For our US friends. Our traditional 9”x13” pans are about half as big in surface area so just add an extra half of all ingredients.
    It took closer to 30 mins to be ready but came out great. And in the US castor sugar is just ‘ver fine’ granulated sugar.

    The only thing I can think of that comes close to this is a snack cake called Zingers. I can tell you, we never had treats like this in our school lunches. Thanks for another wonderful recipe Rik ❤❤❤

    That looks super moist and I can’t almost taste that sweet but tangy raspberry jam. Just yummy topped off with some creamy custard. Wish I had seen this before I just popped a rice pudding in the HySapientia- another day for sure.

    This looks absolutely amazing, and another "to make" on my list. I love that you are doing some "old school dinner" recipes at the moment, but i would love to see some easy Thai recipes of desserts that we could try (if we would be able to get the ingredients in UK).

    Here's another recipe {not sure if you have made it as I am still going through your videos} Manchester Tart, or Curd Tart...Both equally tasty. The portions were small as I remember.

    Hi Rik made this twice now and it's stunning, when you cook it do you use the bake setting or the air fry?

      Hi, Wayne. This pud is cooked on toast 160c. I use both - depending on what I'm cooking. When this oven first came out - I suggested to the company that the low fan setting to be included in the toast setting it would revolutionise this. Making cooking at temperatures with no blasting fan. It would be good to have a low fan at say 170c in the oven. For an example - that would make cooking Yorkshire puddings at 230c - low fan would help them rise, just like a normal oven instead of rising all mis-shaped. Best, Rik

    Looks delicious and brings back a lot of good memories of eating this. Perhaps air frying at 170C for about 15 minutes would be worth trying next time

      @@BackyardChef This is the problem with air fryers, timings of many tradition recipes aren't really known and it's down to people like yourself to find the optimum cooking temperature and cooking times. Keep up the great videos and amazing food

    Had pineapple sponge and custard for lunch today - was OK but needed to have been warmer, and the custard was out of a box. Not going to complain as I didn’t have to make it!
