Depends on the specific type of virtual instruments. I make dance music which is typically 40 or so channels of vst synths, a few samples and lots of insert effects. Most I've ever seen my ram usage is 7.5gb. So paying hundreds for more ram would make zero gains for me. Different story if you run rom/sample based synths or giant multi-sample libraries though.
I have the MacBook Air M3, 512GIG with 8GIG RAM, I opened 5 Word documents with heavy diagrams, 4 Excel Sheets, Logic Pro, Outlook and most of the apps on my Mac with 15 Safari tabs, navigated between all the documents and tabs with no hassle at all, memory pressure stayed orange and nothing was slow (that I could notice), MacBook was snappy as hell, just my experience.
One thing I noted, In the multitasking export test, the 8gb uses the swap file, therefore putting pressure and wear on the SSD. And those are at premium price at Apple. So save your SSD and get the 16gb.
Anyone doing serious exporting will never buy an 8GB laptop--common sense is important. But I do occasional renders that take a few minutes, so I close other apps and it's a breeze with nominal swap use. Again, common sense.
@Peytonwatson14 a minimum of 8gb, but its the reason now all base macs are now 16gb, as will bring 8gb machines to knees, and you cant even load a model with 7billion parameters. It would take the whole memory. When its released on macos lemme know
For casual browsing, reading and some notes, I have the iPad... but since my work consists of graphic design and photo editing, I really can't be comfortable with 8GB. I always had to bump it up even if people are saying an 8GB Mac is really better performing than an 8GB Intel and that Macs are more efficient with their handling of memory. Here's the thing, every computer I bought stays with me for 5 years or more. And now with Apple bumping up the newer Macs to 16GB because apparently their heavily marketed Apple Intelligence is going to need that much to run optimally on 16GB... well, even if I doubt Apple Intelligence will be of use in the next couple of years, it's good to know one has enough buffer with both memory and storage. :)

No one will complain about having more RAM, but I have been using 8GB or less in Windows machines for decades with no issues. For many people, 8GB is fine.
The thing that people forget is that the GPU and CPU share the memory. So even 16GB is more like 12 GB (or less) if comparing to a computer with a GPU with 4 GB of memory. My 2015 27" iMac has 24 GB memory and 4 GB for GPU which is a total of 28 GB. Going forward I wouldn't get a new mac with less than about 32 GB of memory.
I have a Base Model MacBook Air. 8x8x8. I do my 4k video editing in this only. It works perfectly fine. It gets hot but system never stopped working, ever. It's my day to day computer and well as editing computer. So if anyone who wants to ditch their old computer to a new one because of the RAM. You shall have a second opinion about that.
I concur with the idea of upgrading. I've tested the 8GB version of the Air and consistently reached the RAM limit. While you may not notice a performance difference due to the swap memory, it does incrementally wear down your SSD. The incremental costs with Apple products are frustrating. If 8GB were sufficient, why then did Apple upgrade their older models to 16GB at their stores? If you've recently purchased a MacBook, it's best to keep it. However, for those upgrading from a machine that's four years old or more, opting for the 16GB model is advisable now.

You need to read about Apple Intelligence, as it appears you need to understand that Apple designed it to run perfectly on 8GB as it does on iPads and iPhones. They are not large learning models but small models that use little RAM (quantised). When not in use, they are closed or sent to swap. The main reason why they went to 16GB is because this year, CoPilot+ on Windows forced OEMs to start at 16GB, so Apple had to follow the market. Last year nearly every OEM had 8GB base models.
