AV1 can still be decoded by 4700u using software, so its not like AV1 would not work with 4700u. Intel has dedicated decoder for AV1 which means better performance for AV1 decoding.

It comes with a Ryzen 7 4700U APU; 16 GB RAM (DDR4-3200 MHz); 512 GB NVMe SSD (Intel) and a 14" FHD IPS panel with 400 NITS and 100% sRGB. When you said in the video that the Ryzen 7 4700U does not support 400 NITS, that's not accurate, it does. And the integrated AMD Radeon RX Vega 8 (in the newer Ryzen 4000 APU:s) is slightly better than the Intel Iris. And the most astonishing thing is that this laptop is very, very cool and quiet, I never hear the fan, not even under load. This VivoBook is a beast. Bought it for $800.

I haven't used Swift 3 with the Ryzen 5700u. intel 11th gen CPUs have better single core performance but Ryzen 5700u will win in multi-core workloads. Both are excellent choices

Word processing, extensive video chat meetings, presentations, photo editing, browsing including video streaming are the main tasks. I'm soooo confused and I've watched so many videos. I need a fast laptop that could handle having two browser windows open with about 10 -15 tabs open each and some background programs open like Word or Paint all at the same time and hooked to one (ideally two) external monitor. I need good color accuracy display. I don't need it to be light as it is used as a desktop. I thought I was set to go with the Dell Inspiron 5515 AMD Ryzen™ 7 5700U 8-core 16 gb ram/1 TB SSD, but then started looking at the Acer Swift 3 i7 11th Gen 16 gb ram/1 TB SSD. I don't know what to get now.

If you plan to run adobe premiere, then you need at least 16GB RAM. Go with option 1. But since you are Elon Musk, why do you care? You can buy anything!

If battery life is not important go with Ryzen 7 4700U. Its a performance beast and will easily handle all the tasks you listed

The new 11th gen intels with the i7 actually has better gaming performance than the amd Ryzen u series chips now. AMD had the old 10th gen intel beat
