I am personally not vegan but this is one of the most impressive vegan/recipe/budget saving videos I have ever seem on this platform. I don't do dairy often but I do eat some lean meats like turkey, chicken, and fish. I rarely eat red meat. I look forward to making these recipes as I am getting back into meal prepping and have an Aldi's that is walking distance from me. Comes with a price of all that plastic waste, and the approx 20% waste caused by these mega centralised food production & distribution systems!. You should take a look round the back of Aldi (or any supermarket), you would see skips( Dumpsters in US) FULL of perfectly good food, and every other thing they sell. Toilet paper, Detergents, anything even tools and clothes, if there is a slightest mark, scratch, dent, or with food, day of sell by date, it’s chucked away! That’s after the massive waste on the massive farms where veg is wasted just cos it’s a bit too big or mishapen etc. Then there is the Pallets of waste at the Supermarket Warehouses. Pls think, from cradle to grave, there is only 1 Planet! 🌎🌻💚✌🏽 ‘’Veganism is not enough’’( the late Kathleen Jannaway, Co Founder of the Vegan Society, 1944), I personally heard her say that, she meant of course that Veganism needs to be Environmentalism as well, or we are harming Wildlife.

They are starving for someone to fill in the gaps. They are family I'm not financially responsible for, but I love em, as much.

Aldi are an incredible store; I absolutely love the range of fresh produce they have there. The fact that they also sell chia seeds, flax seeds and a lot of plant based alternatives now is awesome too

Everything in this video was SPOT-ON exactly what I was looking for in a weekly meal plan. Pre-prepped building blocks, lots of flavor and different combinations that all look delicious and satisfying. I'd eat every one of these recipes (though I'm a little skeptical about the "meat"). Although we ate beans alot growing up I'm not very fond of them, BUT I do enjoy black beans by adding some green olives to the sofrito before adding soaked beans; then add seasonings, tomato paste, veg stock/water-they are so yummy!! Your channel came into my feed, and I'm so glad it did. I love using leftovers to make new meals each day, as I hate wasting food, so all these meals were great. Plus, I love beans...so a win for me. Only problem, I don't have an Instapot...so cooking the beans does take more time...but....rather do that than reach for any prepackaged type of foods. New sub here from Melbourne, Australia.

This actually looks good! I find that some budget friendly vegan/ vegetarian recipes tend to be way too basic and look not so yummy but I absolutely want to try everything in your channel.

YESSS. Thank you! I hate, hate when people say living vegan is expensive. It's not. Buying mock meat, cheese, super boujee juice bs is expensive and not the norm for most people who live vegan.
Or that it is boring.

Although we ate beans alot growing up I'm not very fond of them, BUT I do enjoy black beans by adding some green olives to the sofrito before adding soaked beans; then add seasonings, tomato paste, veg stock/water-they are so yummy!! These meals you made with beans looks sooo delish I must try too!!😯😀💞

Your channel came into my feed, and I'm so glad it did. I love using leftovers to make new meals each day, as I hate wasting food, so all these meals were great. Plus, I love beans...so a win for me. Only problem, I don't have an Instapot...so cooking the beans does take more time...but....rather do that than reach for any prepackaged type of foods. New sub here from Melbourne, Australia.

I already cook plant-based food for my family, but watching these videos make me want to continue - even if sometimes I end up spending most of my Saturday in the kitchen :). Whoever hesitates about switching to plants - don't! So many amazing tasty foods....yummy!

Amazing vegetarian dishes I must say. I love cooking and I am 59 years old have cooked traditional Indian food but have always loved the twist on vegetarian food so lived your budget friendly meal prep and different ideas like tahini in dal, or almond butter going to try it next week

Note to everyone: I made the black bean sofrito but instead of canned tomatoes , used salsa and cut up two Roma tomatoes to add to it. 🤪🤪 DELICIOUS!
