If you do the same action on the Windows 10 OS then yes it will stop the automatic updates.

Can you please tell me if there is a way that after the automatic update I disable the automatic restart of my computer
First open Settings then go to Windows Update. Click on the Advanced Options and enable the following option
"Notify me when a restart is required to finish updating" and also change the Active Hours. Active hours means that Windows will not restart during this time and will restart after the Active Hours.

If yes then it might be your Domain that enforce its policies to run the Windows update.

Enable the Windows Update services from Windows services and set the startup type to automatic. I am sure it will help.

The same way you disabled it through services you can enable it from there
Open Windows update services and from start up dropdown choose automatic and then click on the start button to start the services. Now you can update your Windows using Windows Update in the Settings menu.

@Tech For All this doesnโt work anymore microsoft has made updates mandatory since win10. I did this on win7 but win10 after turning off from services it automatically start again.
there is no official way to stop windows 11 from update Microsoft lies and they don't want to you stop it as it still updating even if you do what in your video
