    Do you like LOTUS cookies?
    I think of cookies as coffee and soul mates.
    Do you think the taste of both coffee and cookies will level up if you eat them together?
    What a feeling.
    When I was in my 20s, whenever I ordered coffee at every coffee shop, they always gave me a LOTUS cookies.
    Anyone know?

    It seems to have become a story of memories these days.
    Today, I will make a delicious and beautiful cake with the LOTUS cookies that many people like.
    I went to the supermarket and bought LOTUS Biscoff Sand Cookies.
    I took out one and ate it, but the caramel flavor is so addictive!
    It tastes so good.
    So I decided to make a cake with this. I made a recipe that uses all the cookies and cream.
    Instead of the cumbersome glaze, I used a simple bisscope spread and it was so good.

    **About LOTUS...
    It was started in 1932 by a Belgian baker named JAN BOONE.
    LOTUS means lotus, so in the early days, lotus flowers were drawn on the wrapping paper.
    And Biscoff is a compound word created from the first letters of Biscuit and Coffee.
    It's not at all awkward to say that coffee and a heavenly relationship before, isn't it?
    Also, LOTUS cookies are suitable for vegetarians.
    It only contains flour, sugar, vegetable oil, sugar syrup, sodium bicarbonate, soybean powder, refined salt, and cinnamon.
    The cream in the sandwich cookies is also vegan, so vegetarians can enjoy it too.

    237 ml = 1 cup
    15ml = 1Tbsp
    5ml = 1tsp
    1 egg (without shell) 53g
    Heavy Cream (35% milk fat)
    (Chocolate is minced, flour is before sieving)
    ● Ingredients
    ● Cake finished size ( 18cm*4cm )
    ● LOTUS Biscoff Cheesecake
    (Mold size: 18cm)
    85g LOTUS cookies (11 sandwich cookies / 11 square cookies)
    8 g sugar ( 2 tsp )
    25 g semi-dried figs (1 + 1/2)
    20g chopped hazelnuts (27 pieces)
    40g unsalted butter (2Tbsp +2tsp )
    (Figs and hazelnuts are optional.)
    270g cream cheese ( 1 cup + 1/4 cup )
    25g sugar ( 2Tbsp )
    5ml vanilla extract ( 1 tsp )
    50g LOTUS sand cream (cream in 18 cookies)
    (or LOTUS spread)
    --- (Please remove the sugar when using the spread.)
    4g powdered gelatin ( 1/2 Tbsp )
    20 g water ( 1 Tbsp + 1 tsp)
    200g heavy cream ( 3/4 cup + 1 Tbsp + 1 tsp )
    55g LOTUS cookie crumbs (7 cookies)
    ● LOTUS glaze
    LOTUS Biscoff Spread 80g
    ● For side weaving
    LOTUS Biscoff Spread 20g
    25g LOTUS cookie crumbs
