I LOVE spinach in cream sauces. I throw in like 3 bowls cuz I love to get a big bite of the wilted spinach cuz my sauces always coat it amazingly. I hate raw spinach but omg it’s so good cooked down lol
I'm 22 and have been a vegetarian all my life, so I will definitely be cooking all three of these! For the eggplant, I highly recommend frying it with white wine. Its a recipe similar to what my dad used to cook when I was growing up. Then add some pickled capers and chilli flakes. Its a medley of flavours that melts in your mouth. I can ask him for the full recipe if anyone is interested, but I also know of a number of childhood pasta recipes. At least 10.
I made the mushroom pasta for dinner last night and OMG!!! It was a hit at my house. I made a huge pot and added some broccoli. It came out perfect. I was hoping for leftovers for today but we ate it all last night. I’m going to try the ratatouille one tomo. I can’t wait 🤤

I would also really love to see some healthy dessert recipes as I'm really trying to lose weight but I have such a bad sweet tooth. Love these! We eat a lot of pasta (usually just with store-bought pesto and some parmesan on top) but I've been wanting to change it up a bit. Also I love eggplant, mushroom and cauliflower but I never cook them at home so this is perfect!
Just made the cauliflower pasta. It was amazing. The toasted panko on top took it to the next level. I added thin sliced onion, just a half in with the garlic step and Omg I thought I was at a restaurant. Thanks so much. Gonna try the mushroom pasta next. 💜💜 I have stage 4 kidney disease and can’t handle too much protein. These veggie pasta’s are a life saver.

I love this video! I made the mushroom spinach pasta for dinner and my family LOVED it, it was so yummy! I only had feta cheese instead of Parmesan, So I needed to add some cornstarch and water to thicken it, but it was perfect still! Excellent recipe!
I tried the ratatouille pasta last night and it turned out absolutely delicious. I only ommitted the parmesan and swapped parsley for basil. She truly hit it out of the park with that recipe. 10/10 would make again, and is so delicous yet simple. Thank you for the videos you produce on your page!

Sweetie, vegetarians use dairy products, vegans do not. I'm been a vegetarian for a bit over 60 years (just turned 65) and always used dairy products but I eat less eggs than I did and I did develope a slight lactose intollerancy. I make this really good super simple pasta side dish. It's Israeli couscous cooked in broth with diced zucchini, green peppers, and onion added in. It's sooooooo simple and sooooo good lol

Here's a tip if your eggplant tends to get bitter: take some regular table salt and sprinkle it over the sliced/cut eggplant.. Let that sit for 15 to 20 mins then take a towel and wipe all of that salt away. Its easier to cut the eggplant into slices then do the salting and finally chop the eggplant into smaller sections!
