Unfortunately I disagree with quantities of ingredients. 2 kgs of dates with 4 litres of water is enough without adding sugar provided you grate dates for extracting all sugar content within dates. You added 750 grams of sugar with 3 litres of water is actually enough for plain wine called "sugar wash" In your recipe, it must have resulted extremely sweet wine. Secondly, only juice extracted from fruit may be fermented for 3-4 weeks, if fruits where you can not extract juice and ferment with whole fruit must be strained after a week and put into secondary fermentation for 2-3 weeks or untill wine is clear and all lees is on bottom of fermentor. It is a sincere advice and should not be taken as harsh comment. Please try my way any time. You won't be disappointed. Soak 2 kgs of dates in warm water for 2-3 hours, blend in mixie or run stick grinder to a fine paste. Add a cup of sugar if you want stronger and sweeter wine or just drop sugar. Your additives such as cloves, cinnamon, cardamon are good. Please add a cup of black tea as tenin and juice of a lemon or a pinch of citric acid to maintain pH of Must and it will also result in good cleaning. Primary ferment for a week and strain all mud of dates. Cloudy Must will be fermented as secondary fermentation. Decant after you find the Must clean and transparent. Enjoy as young wine or stay it in bottles for ageing. It will be more and more tasty as long as you age it. Keep experimenting and stay blessed.
