I would add stock cube to water no salt as the stock has it already. When the onion softens add cumin and coriander powder let the spice cook out the add the stock until veg is tender, next blitz

I myself add a few tomatoes to make it a bit less sweet (and to add a bit more color to it). Mind you, all my vegies are from my own yard without the use of ANY pesticides, thus not bought from the store where god knows they have been. Way better and way much sweeter for some reason. ;) But indeed, that's the basics on how to make a simple but yet very tasteful pumpkin soup. Add herbs to you liking, but do not forget to add a bit of black pepper. Pumpkin soup demands pepper (specially during cold winter days). LOL Fun thing with this soup you can add whatever you like and it will still taste good. LOL Cheers!
I would use some at least 3, potatoes pumpkin soup takes 45, to an hour to cook not 5, minutes the longer soup cooks on low heat the better has nice flavour also I would use at the end some cream &, fresh parsley on top with freshly grated Parmesan cheese ...new Yorkers make it like that not 5 minutes lol above alll this is too simple for me

Both these spices are great in Pumpkin soup. Stock cubes are also great.
