    Before going to Saigon this trip, I had eaten it a number of times, and it had always been one of my personal favorite Vietnamese snacks or light meals / foods. Although it’s originally known to be a northern Vietnamese food, it’s widely available throughout Saigon as well, from street food stall to nearly every market. When I was in Saigon, I went to a restaurant called Bánh Cuốn Hải Nam a number of times, once with Kyle (), and a few other times as well. It was quite good, and though there are many other places to eat banh cuon in the city, this restaurant was very close to where I was staying, so it was very convenient.
    So what is banh cuon? It is a Vietnamese means rolled cake, and it all begins with a thin batter that’s made from rice flour and is lightly fermented. On top of a pot that has water boiling below, there’s a cloth that’s pulled onto the top, in order to be the crepe steamer. The thin batter is poured on top of the steaming cloth, flattened into a thin crepe, then covered and steamed for just a few minutes. The wrapper really only takes about 1 minute to steam, and them it’s carefully removed with a wooden stick, and filled with a mixture of minced pork, garlic, wood ear mushrooms, and in this case I noticed some small dried shrimp in the mix as well. After the banh cuon is rolled up, it’s then put onto a plate, cut up into pieces, garnished with bean sprouts, lettuce, and the all important handful of crispy shallots. Sometimes you’ll find other toppings and the addition of Vietnamese sausage on top, but the version at Bánh Cuốn Hải Nam came with the sausage on the side.
    In order to eat the rice crepe rolls, you must have the Vietnamese sweet fish sauce dipping sauce, which at this restaurant was sitting on every table in an inviting jar. After putting a scoop of the fish sauce into my bowl, I then added in a scoop of fresh crushed chili to give it even more flavor. I have to say that banh cuon is one of my favorite Vietnamese light foods or snacks. The outer crepe wrapper is thin, silky and just slightly sticky, while the inside filling is savory, meaty, and has a wonderful garlic flavor. The sweet fish was is salty and tangy, and the extra spoon of chilies also adds some marvelous flavor.
    Along with my plate of rice crepe rolls, I also ordered a plate of something called banh beo, this version topped with minced pork. Banh beo are small steamed rice cakes, and the batter in this case had a wonderful coconut milk flavor to it - so I think they used coconut milk into the bottom pancake mixture? The banh beo was wiggly and creamy, and the same meaty pork mixture was placed on top along with what I think was a handful of yellow crushed shrimp… or coconut, I’m still not sure. Anyway, it was quite good, but overall I think I preferred the banh cuon over the banh beo.

    Bahn cuon is one of my favorites. I get mesmerized watching the woman making it. The timing and assembly line process has to be perfect. There is a square tray variation, but I prefer the circular one like what is eating. I just love watching them make it.

    Nice video. I don’t know how to eat this stuff so I looked here and found this video.
    I get this stuff at THH Sandwiches and Coffee in Tustin, Ca. They have it ready to go at the register in a plastic wrapped plate. Comes with around 6 rice paper & ground pork pouches, dipping sauce, crispy onion & garlic sprinkles, and a side of sprouts.
    They have spring rolls with peanut sauce and other ready to go dishes too.
    The sandwiches there are the bomb.

      Yes you can find the bag of flour at any asian store, itll show the picture n the name on the bag. It's very easy to make and very delicious! If youve made crepes before, thats how you would make the rice flour wrapper.

    Hi Mark love your videos. Probably my favourite travel channel on youtube. One thing about the fish sauce for the banh cuon is generally you pour it over your banh cuon and eat it that way, adding more according to taste. Regardless the way you were eating it wouldn't have deterred from how it was meant to taste. But I'm sure plenty of people would have mentioned that already in the comments. There is also a lovely banh cuon place that do an egg variation of the banh cuon - they add in beaten egg to your rice flour crepe to give it a bright yellow colour and slight egg taste. It is one of my favourite places, at Banh Cuon Thien Huong, 179A 3 Tháng 2 (or Ba Thang Hai) street, Ward 11, District 10.

    this is my favourite place for bánh cuốn before going vegetarian. The fish sauce that goes with it has added water, sugar, lime juice, chili and sometimes minced garlic. Looking forward to recreate vegan fish sauce !!

    It is coconut milk, and there is a variant that may well be Lao since it was at a Laotian Market I used to get it that is the coconut batter cooked with green onions on the top. Sweet, coconut with onion sounded strange to me, so I tried it and fell in love.

    You made the fish sauce so wonderful. The fish sauce is watered down a little bit bit for these dishes in order to make it less salty. So, you need to pour the fish sauce into the dish to get the full effect. The Banh Beo you eat is a dry version. There is also another version with some kind of paste on top rather than the dry toppings and it is more common I guess. So wonderful to see you enjoy Vietnamese cuisine.

    You should travel to St. Paul MN the next time you are in the US again. We have an Asian market called Hmong Village that features most of the food that you have been eating. They have a mixture of Thai, Laotion, and Vietnamese food all at this market. Plus, they are mostly made by people who use to live in Thailand, Laos and Vietnam. So it's pretty authentic food.

    Pretty much everyone I know loves banh cuon, including me. I can eat this by the boat load. Usually, we pile some into a bowl, toss in all the veggies, thinly sliced ham, and fish sauce and eat it. Like a noodle bowl of sorts. Yum, yum, yum!!

    In Chinese cooking there is a dish that is a You Tiao (an oily deep fried stick of savoury dough usually served with congee) that is wrapped in this kind of rice noodle creep. It's yummy!!

    The Banh Cuon looks so yummy, The chillie and fish sauce makes my mouth water. the other dish also looks great have to try and find it here in so. Cal. You did a wonderful job as always Mark.     Bánh-cuốn is my fav dish of foods that made from rice flour. And You should have dipped the Bánh-bèo in mixed fish sauce, Mark. That how the dish should be eaten. But it’s good that you have tried our foods.

    The best sauce for this dish is a chili dip that consists of fresh Thai Chili pepper, cilantro, green onion, dry, roasted chili powder, roasted, ground peanuts, MSG, fish sauce, a little bit of water and lime juice. You can add toasted sticky rice too if you want. This sauce tastes better than that one.

    Both types looked delicous. I've had the Chinese style ones with sharsui pork in them, but never had the Vietnamese type. Hope you two are doing well.

    Hi Mark... Are you back in Vietnam or is this vid from your last visit? The food over there looks amazing!!
    When I'm back in Thailand I can't wait to check out some of the joints you've recommended and hopefully you'll be in town to come along.
    I think all your food loving fans owe you a lunch or dinner for making such great vids. You make my mouth water every time !
    Think I might have to consider hopping over to Saigon to try some of that great looking food when I'm in that part of the world.

      I love the vid you did with the street cart ' The Ultimate Thai Chicken Recipe'.... Very hard to choose but I think that's my fave. Amazing !!

    I love banh cuon Hai Nam! I go there really often! Surprisingly, I like the banh cuon at Ben Thanh market better. But the best banh cuon in the world? That one is in California at Pho Tau Bay in Santa Ana.

    It's like one of those rice noodle rolls that we see when I go out for dim sum. The method is the same, but just different fillings that's all.
    It's just that this is a Vietnamese take on a Chinese influence, since Vietnamese cuisine is a cross between Thai and Chinese, leaning on the Chinese side for the most part.

    It's easier to eat when you pour the sauce and chili directly into the plate with the Banh Cuon so that it doesn't get too messy. That what I do to prevent the stuffing from coming out as much so that I can eat more! XD

    We water down both of the dishes with the fish sauce using a big spoon. Just scoop the fish sauce with a big spoon and pour all over the two dishes.
