Cookie Dough Cupcake Recipe | Cupcake Jemma

- Hi gang! Hope you're all looking forward to the start of 2017. What better way to see in the new year than with the recipe for a true C&D classic - Cookie Dough Cupcakes! These use a burnt butter sponge, classic vanilla buttercream and tonnes of delicious cookie dough to deliver one of the most popular flavours ever in our Soho store. Let's bake!
For the cupcakes:
100g cooled burned butter
30g soft unsalted butter
125g self raising flour
65g caster sugar
60g light brown soft sugar
1/4 tsp bicarbonate of soda
25g chocolate chips (I like dark-ish 50% chocolate for this but just use your favourite)
2 large free range eggs
1 1/2 tbs whole milk
For the cookie dough:
120g soft unsalted butter
50g chocolate chips
95g caster sugar
45g demerara sugar
1/2 tsp vanilla extract
100g plain flour
2 tbs plain yoghurt
pinch salt
For the icing:
150g unsalted butter, soft
340g icing sugar, sifted
3-4 tbsp whole milk, mixed with 1/2 tsp vanilla

just wanted to tell you jemma: baking is a big hobby of mine since - i would say - three years now and you played a huge part in that. earlier this year i flew all the way to london to visit your shop in soho - it was amazing! i ate two huge cupcakes and showed myself out afterwards because i was a bowl of chocolate and peanut butter after that cupcake-feast but still: although we've never met i just wanted to let you know: i love your vids and i love your recipes, i made hundreds and hundreds of cupcakes with your instructions since two or two and a half years now and i still tell everyone who wants (or doesn't want) to hear it: "try this recipe, none of her recipes ever let me down" - you don't need to reply to this, just maybe read this and know that i am glad that there's such a passionate baker out there who inspires a lot of people (and i know you hear this a lot, but: thanks, you rock!)

Guys i just done them this cupcakes. Reporting : The texture is very nice . But i think the reason Jemma didn't cut them open for us is because that 2 cm piece if dough that you put underneath is 100% blending into whole cupcake and can not been seen or even identified when you eating them ,unlike the other cupcakes recipe like Jammy Dodgers when we put biscuit on the bottom and it can been seen and taste interesting . I didn't had light brown sugar so i actually used soft dark muscovado sugar in cookie dough and cakes and its good ))) Anyway i like them because of burnt butter taste yum yum ))
Did u use DEMERARA sugar? I have no idea what that is

Demerara sugar looks like coffee sugar, the light brown one in tiny little square crystals. She uses it to give the cookie dough a bit of scrunch and texture. I would substitute with coffee sugar or any brown sugar crystal sugar. I wouldn’t substitute with soft brown sugar, as it bakes more gooey, and you won’t get the same results. Happy baking!

this years christmas at my inlaws we were with 15 people and I was in charge of the dessert... Surely I had to impress them, and your twelve bakes of christmas were a true inspiration! I made these last week, and although it's true that the two doughs blend you can in part still taste the cookie dough at the bottom. They were really delicious!

My son and I visited the crumns and doilies shop in April and we both had one of these. it was devine. He aslo and a rainbow meringue topped cupcake too which he loved. jemma bakes a mean cake. x

Happy new year to you babe and all your team , we have met ( very proud of it , and we got your book and this book is actually very often used and abused for cakes, cupcakes, and everything whats in it . We have ordered 3 different cakes from your shops , all 3 was great quality , fresh and all ( just a bit too expensive but for very very special occasion was allright ))) our favorite so far is Choco Caramel Salter Pretzels one ( i want to make that one soon for my daughters birthday its in that book ) have a great 2017 !

Hi Jemma! I'm definitely saving the cookie dough recipe for some homemade cookie dough ice cream! One issu I have with your recipes though is that self-raising flour is not available where I live. What ratio of baking powder do you recommend to add to the amount of flour to get the same result? Have a great new year's eve!

I really enjoyed making these and good to find a recipe for safe cookie dough! I did find that my cookie dough in my cake was stuck to the paper and came separate from the cake which was a bit disappointing I froze them like it says. I think next time I will put a little cake mix then a cookie dough then more cake mix to make sure it doesnt happen. Love u cupcake jemma I make loads of ur cakes they're amazing!

Wasn't that the whole point of the surprise inside it?
I really wanted to see inside too.
I made them. The dough dissolves into the cupcake and you can't really see it.
It might work if it was more like a hard crumble at first that would get softened by the baking batter but idk
