Chef Lee: This looks very easy and your "Hanging" technique is genius. I would make this delicious looking pork if it wasn't for health reasons. Yes, I canhave one or two pieces, but I don't have the willpower. I just wanted to compliment your recipe!

Very nice dish Chef. I've seen similar but it was done a little differently. The chef hangs the pork outside on the rooftop of the restaurant for one day before cooking it. Maybe you can explain that. I had a lot of Chinese leftovers this week so my next dish will in a few days yet to be determined. My trip to Toronto has been cancelled but we will be going into a different area in southern Ontario next week so on the way back up, we will stop at Centra to stock up on Chinese goodies so I can keep "wok" ing. See you when I get back.

Few chinese char siu making are made with added preservative or curing ingredients , like potassium nitrite. So, they like it sun dried to make the surface dried. So, they will cause some char on the surfaces for good look. Keep working and woking your good Andy.
