- After Anthony Bourdain and Sean Brock finish many, many, many rounds of drinks, they visit the best/only choice for late-night dining in Charleston, the Waffle House, an irony free zone where everything is beautiful and nothing hurts; where everybody regardless of race, creed color or degree of inebriation, is welcomed. Its warm yellow glow a beacon of hope and salvation, inviting the hungry the lost the seriously hammered all across the south to come inside.

What I loved most about Anthony Bourdain: he could be at a Michelin rated restaurant in Europe, a hut in Vietnam, or a suburban greasy spoon…but he approached every experience with the same respect, interest, passion, and appreciation.
That's the beauty of food, and exactly why he was such a joy to watch. Every person who steps into a kitchen brings something new to the table.
If anything he would love the hut in Vietnam more then the Michelin restaurant in Europe he always avoided the beaten path.

I always loved his comments about chefs talking about what they'd want their last meal to be, and a lot of them would choose something like their mother's meat loaf smeared with ketchup on white bread.

When traveling on business, I had a bout of insomnia and decided to walk in an unfamiliar city. The only dining option open at the time was a Waffle House. There I saw a profound example of humanity. There was a waitress working the graveyard shift who had ability to provide childcare. She toiled away whilst here small child sat quietly in a corner booth with a coloring book. All the other employees took turns to look in on the her kid. Everyone working there was close. Her working a shift was either out of the need for a paycheck and/or deep sense of obligation to her colleagues. Regardless, it touch me deeply to see this little community of caring people. I tipped well and went back to my room and slept like a baby.

I worked at a Waffle House with a woman who was 40 plus, 8 months pregnant, a new grandmother, and worked the overnight shift. She never complained ONCE and worked harder than everyone. Truly a badass woman.

My ride wasn't going to be there for another two hours, and all I had to my name was my wallet, fifteen bucks, and a flip phone. But! Hark, what do I see right across the county highway? No matter what culture you belong to, sometimes you just can't beat good old cheap, inviting food like this. Here in America it's Waffle House, Soul Food, BBQ, or your favorite local diner. In Mexico it could be a tamale, street taco, or torta place. In an Asian country it could be a cheap dumpling or soup restaurant, etc., but there is always a wonderful, welcoming taste that appeals to just about everyone.
Tell that to the Hermes family. They would never be caught dead in a place like that

They make conversation, we shoot the shit, and the chef makes a bacon hashbrown bowl with pickles tossed on top.
Then I sit there for an hour decompressing and vibing. Another person told the waitress to watch out cuz "That guy looks and sounds like Ted Bundy motherfucker" and she simply said "I know!" With a grin and a wink.

This was one of my favorite episodes. He didn't care if he ate at a 3 star Michelin restaurant, had noodles with the President, or ate a tasting menu at the waffle house with a fellow chef. As long as the experience, conversation & food was good. The world is truly a lesser place without him. You will be missed, Anthony Bourdain

I’ll tell ya what, Anthony Bourdain is greatly missed. I’m American and haven’t traveled that much outside the U.S. and I learned so much about other places and cultures from his shows. He got along with everyone.
I had the honor of having Anthony as my chef at Les Halles in Manhattan when I was younger.

What’s awesome about Bourdain was how he appreciated food for how human of a thing it is, not for any of the restaurant’s ratings or nebulous signifiers like “authentic”. Waffle House is clearly something many people feel they have a connection to and there is joy in this shared feeling of it being a sanctuary destination for people when out late doing whatever.
In Tony's own words, cooking is an inherently nurturing thing. If you decide to do it and even more so, decide to cook well, you're on the side of the angels. Honest people cooking honestly feeds everyone in the world everywhere.
Two of my favorite chefs. I like Sean Brock, I like his understanding of, historical and cultural, and respect of Low Country cuisine, from a place my father grew up. I was gifted the opportunity to dine at Husk a few years ago for my birthday, wonderful present from the wife. I love Anthony Bourdain. He is a poet and spoke meaning into the sometimes meaningless places of a kitchen. The dishwashers, the line cooks, burning yourself, getting yelled at, your legs hurts, your arms hurt, you do too many drugs after work, you drink too much to wash it away with your proverbial fellow comrades in arms, you live another day to tell the tales. Contemplative, world-weary in his later days. Came so far from where he started, always learning. Troubled. His sudden death, without explanation from him, I still haven't gotten over it. He was a celebrity who didn't want to be one. He enjoyed the simple but good, the warmth of dishes best made by someone's grandmother. I don't think there will be another Bourdain, they don't make those anymore.

This was exactly why Bourdain made his mark in the culinary world. Here was a man that had travelled the globe and sampled some of the finest cuisine known to man. And yet, he was more than willing to eat at a down-home blue collar eatery. It was that contagious love for food that made a mark on his audience.
It hurts me to the core we’ve all lost this man.

The thing I like about Waffle House is there’s no judgment. My friends and I stopped by Waffle House coming back from a competition and we were in sports coat, slacks and dress shirts. We walked and and took a seat and it was almost empty and the waitress says where we were looking like a million bucks and we explained our competition. She asked us if we won and unfortunately we got 3rd place but she still gave us all a free waffle of our choice. A homeless man who has nothing but a tank top and shorts on and the president of the US can walk in their and still receive the same hospitality

I was moving house, and my journey had brought me from Alabama to Mississippi. This Northern Yankee had only heard of the Waffle House in jokes and speech that wasn’t exactly reverential.
I stepped in, looking like a total virgin, hoping I wouldn’t get shot or at least robbed. I came out a changed man for the better after tasting those waffles and hash browns.

@@PretendingToCare Order of hashbrowns scattered, smothered, chunked and covered. Which translates as hash browned potatoes scattered on a griddle and fried with pieces of onions, chunks of ham and covered with a slice of American Cheese.
I always got an order of hashbrowns scattered, chunked and diced. Which was scattered with chunks of ham and pieces of diced tomato.
I had a friend who got their order double covered in the ring. Which meant he got two pieces of cheese and had his potato pieces fried in a clump like a potato cake instead of scattered across the grill.
You can also get them CAPPED with mushrooms, TOPPED with chili and Pepped with pickled jalapeno pieces, and Country with sausage gravy. And any mix and match combination you can dream up. Want a double or triple sized order? One two or three slices of cheese? All the way? At one time the menu said there were several hundred thousand variations on the way they could make hashbrowns. I've never done the math but the permutations are pretty lengthy.
Ah Waffle House. Open all night, half the patreons are always poor and or drunk or stoned off their ass, and still manages to have fewer all out fist fights than a Chuck-E-Cheez.

My grandpa used to go to Waffle House all the time to get a BLT sandwich. After he died, we were looking through his old belongings and photos and we found a Waffle House “regular” award pin from 2009. 💛

What’s hilarious about Anthony’s last comment is that at the Culinary Institute of America (the school he graduated from) we recently took down a building sized banner of Thomas Keller (head chef of the French laundry) and replaced it with a commemorative banner for Anthony Bourdain. We also dedicated the main hall of the culinary building to him.
Anthony Bourdain is a big reason why I started caring about WHAT I was eating. His shows were always on as soon as I got home from middle school, No Reservations, and Parts Unknown were always my go to shows. He always had fun, he always respected his guests as much as their opinions differed, and was always appreciative of the food he was presented with. This man, is a role model, hands down.
The beauty of Waffle House is that for a lot of the tables the waitstaff doesn’t even have to leave the kitchen/prep area to take your order. They even deliver your food over a short walk next to the table.
Saw this episode when it first aired, but missed this little nuance until now. At 2:16, when they’re digging into the pecan waffle, the music gets cranked to reveal the intro music to the fine dining documentary series “Chef’s Table,” which I think is genius and obviously planned for dramatic and irony purposes. Well done!!

How the fck can you miss someone you've never meet in your life? Yet, I do miss Mr. Bourdain. While working as host at a popular downtown Chicago restaurant, I read
Kitchen Confidential and it inspired me to attend culinary college.
Some of the work values highlighted in that book I unknowingly adopted as my own, having read it five times. Watching him travel the world, exploring not only the food of foreign people but their culture and their hearts helped me see him as a humanitarian. Humanitarian? Fck yes! He introduce us to soooooo many different countries and their everyday people, while high lighting how food is the common thread that connects us all together. Dam I miss that dude!!!!!

I love the video. On my first trip stateside, I was tired and hungry, and I was welcomed with generosity and open arms. It was also my first "diner" experience (not sure if its considered a diner, though.) The staff became family in my short time there, taking great delight in valiantly trying to teach me how to order like a local. Still as vivid as yesterday, more than a decade hence. :)

I’ve been to this one in Charleston, SC. Right next to the drawbridge and the octagon shaped Holiday Inn which is actually where I stayed. I walked in ordered just before midnight and got it to go. They forgot to butter my toast on my All Star Special but besides that I was just happy to have been in the same space as Anthony Bourdain at one time.
I’m still obsessed with Waffle House. Love the cups. Love the employee’s names. Always an Ethel. Or a Lorraine. “Scattered, smothered and covered. Pecan Waffle, black coffee and a side of grits”. An American Institution that should be on our currency.

To give you an idea about how iconic Waffle House is, they finally had to start selling their coffee mugs because so many people were stealing them from their locations. People talk about the obsession with In-N-Out, Waffle House inspires similar feelings. I know people that live where there isn't a Waffle House that if they are traveling anywhere near one, they'll go out of their way to go to it. I have some friends in California that usually head East once a year to visit family in Kentucky and most of their meals are at Waffle House. I have some Canadian friends that traveled to Myrtle Beach several years ago and ate at least one meal a day at Waffle House. If I were to move from the South, I would have to say that other than my local craft breweries, the only thing I would truly miss would be Waffle House (assuming I moved to a part of the country in which the chain does not have locations).

I grew up in Washington DC. There is not many around here. About 4 in a 55 mile radius. When I moved to Colorado. There was tons! I ate at one almost every night when I lived alone. Most of my mugs in my cabinets are waffle House mugs.
I went back home for Mardi Gras weekend in Eunice La and got chance to meet Anthony , doing a segment for CNN that was from a promise he made from the Travel Channel show . He seemed genuine and sincere , natural charisma for people and our different cultures . God Bless this man … true original RIP .

My grandmother still laughs about me proclaiming Waffle House to be the best food I've ever tasted, with much emotion, as a kid. It was Christmas, no where else was open and we'd been driving for hours looking for a place.
Eating in a Waffle House Christmas Day is almost a tradition. The place is usually packed to the walls with people all day. Whether it's somebody that wants an early morning breakfast before the big meal latter or somebody who wants a light night meal not made out of leftovers or somebody who just didn't want to cook at all or even a person that has nobody to eat with.
I loved how Tony would be serious yet kinda sarcastic in if a place felt cheap or if he didnt like the food. Yet hed always be so fascinated at the same time & willing to just go for it. Whether it was a remote village or a Waffle House.
Ahhhh, grew up 3 blocks from this WH. 30 years ago hung out here with Brad, John, Chris, Richie, Billy and Rhonda....Our friend was the chef and ruined meals on purpose so he could give them to us. Lived in Georgia for almost 4 years during my time in the military. Back in California now. Two things I miss the most from back there are the gas prices and Waffle House. Place was always there for me if I was starving at 2am with nothing to eat in the fridge.
I always tell them I want my hashbrowns " flipped flopped swept and mopped " and when they laugh and say " what?" I just tell them to order their favorite dish and I will see if they have good taste. Actually, I tell a lot of places to make me something they would make for themselves. It's always something new and I have never been disappointed.
Why does Flipped Flopped Swept and Mopped sound like it SHOULD be on the menu
@@astrum_nauta I could imagine it as letting the potatoes cook until crips and melded together on one side then flipped over, swept off the grill and mopped with a brush covered in country gravy or BBQ sauce.
He seems so genuinely nice it makes me sad every time I see one of these videos wish he was still with us. R.I.P

I loved how down to earth he was about every day average eats for regular people. No judgment. He just enjoyed the food. I heard somewhere that his all time favorite place to eat is In and Out. Great guy!

I lived in Charleston in the early 2000’s for about 3ish years. We ALWAYS ended up at that exact Waffle House ( over the bridge on 17) sitting in those EXACT little bar seats. It was the only place we could always go late night, there was always police outside, and it was never an issue. Ever. Literally a saving grace for so many of us late nighters. Once I got dosed at a party and we fled to WH. We were accepted, fed, and made it home. So damn cool to see Chef take AB there on his CHS trip. For all of us that know, really know how significant this simple establishment is to this very special community.

First ever book i bought was year 2000, and it was kitchen confidential... i was mesmorized by it.
Everywhere i travel, i do my regular "has Anthony Bourdain been there?"-- and i visit all those places. If its good for him, then its good for me. I have traced his steps in New York, Los Angeles, Rome, Sicily, London, Prague, Stockholm and Istanbul. He has given me such memories. He has shown me what to look for when traveling, what places to visit. I have went from goint to restaurants to searching out these lokal hole in the wall places in back alleys.
I wont say "reast in peace" since he never rested, he had a mind that was constantly travelling.
Mr Bourdain, thank you for the memories and food... hope to break bread with you where ever you are.
Anthony Bourdains death personally hurt me. I developed a love for food from that man and my mother. She passed away and his adventures kept me grounded through it all

True. If you're up after a certain hour and hungry, it is salvation. A typical 2am in Marietta, GA in early 2001 for me -- Roommate: "Let's go to Waffle House!" Me: "You read my mind."
A crack habit is actually cheaper now though.

I had to watch this again. Anthony oh Anthony I miss you so. Eating at the Waffle House is a way of life in the south. I lived in Atlanta for a couple of years and I had my Saturday lunch there or at the Varsity. A patty melt with loaded hashbrowns and a coke. Thank you mam!
