Also with most bosses only some attacks are pariable and when parying smaller shields will usually have more frames to pary making it significantly easier to do. (Sorry for my bad English as it is a second language for me)
explore and level up, i suggest going like 10 lvls lower than the recommended for the bosses so its not very easy, your dodging is good, youre just too greedy, if you know the pattern 2 hits at max should do you way better than wasting flasks/ also if you dont plan on parrying,(which i dont recommend for beginners) just 2 hand the weapon since it does more damage

I would definitely hook up a controller rather than playing with mouse and keyboard. Soulslikes are so much easier on controller
